Those stringy bits are (well, are supposed to be) orange and/or lemon zest depending on the recipe. I do not think it necessarily ruins it. It is a major source of flavor for marmalade. What I do typically run into, especially in homemade versions, is a very bitter taste. The cause of this is usually taking to much of the "pith" (that white cottony stuff on citrus fruit) with the actual zest. Other than that...I'm OK with it.

Orange marmalade is made from the rind of oranges; hence, the "stringy bits" you refer to are the rind. They do give the spread a slightly bitter taste, but if you don't care for the texture, try some of the other spreads like seedless raspberry, strawberry, plum, grape, or apricot. They're just as good, but without the "stringy bits".

No, for me those are the best bits. My faourite is Frank Cooper's Thick Cut because it has more bits than most brands.
You can get shredless marmalade though if you really hate them. Tastes the same but no 'stringy bits' :-)

Those (stringy bits)that you refer to is part of the process of making marmalade however you can buy marmalade without the(stringy bits) it does not ruin it for me

It doesnt bother me. But I have to be in the mood for marmalade. I prefer lime jam.

No, plenty of people like the rind in marmalade. If you don't, they do make varieties without.

They are the BEST bits! and nothing is more upsetting when clearing away the breakfast plates than seeing people have picked them out and left them on the side of the plate! what a waste!
