My hubsand made it one night on the stove. This was about one month ago. It was very hot and he let it cool off for approx 5 hours. He then put it in the fridge for 2 days to complete the cooling before her froze it in the freezer...My question is - do you think this stuff is still safe to eat? I have had food poisoning once and I am very wary about such things... Please help! My husband insists that I am paranoid and there is nothing wrong with the soup and wants to eat it today.

My major concern is that it grew some bacteria from the period of sitting out and being in the fridge before it actually made it to the freezer... HELP

when you cool down foods you need to do it as quickly as possible. 5 hours is a long time as it would slowly reach room temperature and then stay at room temp for the rest of that 5 hours- perfect breeding ground for bacteria(5-63 degrees). to then keep it in the fridge for two days is unnecessary. maybe a couple hours would have done or even straight into the freezer as long as it wasnt still steaming. freezing or chilling something doesnt kill bacteria it just slows down the multiplying process to a safe level. the soup in the freezer is now two days old as it was in the fridge for that long before freezing, and as a general rule of thumb i only keep foods for 3 days, that is food industry standard. so reheating your soup shouldnt be a problem, just make sure you boil it up well and be sure there are no ice droplets in it and it is steaming hot throughout before consuming so that it can reach a high temp to kill off all bacteria present.
in catering in the UK we have to chilll foods down to below 3 degrees in less than 90 minutes and if freezing them then do so straight away, it is a good idea to do this as it will prevent any likeliness of food poisoning bacteria being present in your food.

Its completly safe to eat...you can freeze soup for up to 1-2 years and it will still be good..so have no worries, i know how bad food poisoning can stink.

It should be ok, since it was frozen. You can freeze up to two months....Make sure heated thoroughly before eating. Do not refreeze.
