How do I apply for his greek passport here in the UK?

You will find the Greek consular officials in London helpful and courteous. (I had to deal with them a few years ago on a nationality-law issue.) Your son must be registered with the Greek authorities: http://www.vancouver.grconsulate.ca/english/services/citizenship.cfm As is common with some other Continental European countries (and Japan, among others) registration is assigned to a particular municipality.

Contact or visit the Greek Embassy and take with you your son's birth certificate and your husband's. Often you can not apply for a passport unless BOTH parents give consent so best to call ahead to see if your husband needs to be present too.

Is his father there with you? I suggest you contact the Greek Embassy and ask what you need to do to apply for the passport.
