This is something different....easy....YUMMY....and no pie crust needed!
My dad HATES sweet potatoes but he scarffed this up like nothing!
SWEET POTATO CRUNCH
Mix in large bowl --
-2cans drained sweet potatoes
-1/4 c melted margarine or butter
-3 eggs
-1 tsp vanilla
-1/2 cup brown sugar
Spoon into 1quart casserole dish-sprayed w/Pam.
For topping, mix --
-3TB butter/margarine
-1/2 cup brown sugar-packed
-1/2 cup chopped walnuts or pecans (this is optional)
-1/3 cup flour
Sprinkle topping mixture on top and bake @ 350 for 30 minutes until top bubbles.
I also have a recipe similar to this that uses pumpkin instead of sweet potatoe and it's served chilled...also YUMMYLICIOUS!!! (I'll be glad to email it to you if you'd like, just let me know!)

I find that because some sweet potatoes are sweeter than others, a recipe that comes out great one time may be too bland the next time. So here's my little secret:
For a 9" pie
Take 3 cups of mashed cooked sweet potatoes. Add 1 cup of light brown sugar, 1 tsp of cinnamon and 1 tsp of nutmeg. I don't like ginger in sweet potato pie - to me it tastes soapy and cloves make it too much like pumpkin pie. Stir and taste - it should taste a little too sweet and a little too spicy. if it doesn't, add a little more sugar and spice until it does. Beat in three eggs one at a time and stir in one cup of heavy cream and 1/2 stick of melted butter. Pour into a prepared pie shell -
Secret number two: I either make a sweet crust (recipe follows) or I buy a frozen deep dish pie crust, let it thaw out, re-flute the edge and brush it with melted butter. But the sweet crust is TO DIE FOR!:
•1/2 cup butter, softened
•1/3 cup brown sugar
•1-1/4 cups flour
•1/2 cup finely chopped nuts
•1/8 tsp. salt
•1/4 tsp. baking soda
Cream together butter and brown sugar. Add remaining ingredients until crumbly. Press crumbs against bottom and sides of 9" pie place, building up a 1/2" rim.
bake pie at 350 degrees F for about an about an hour or until firm and center just barely shivers.
Important thing is to taste for seasoning BEFORE you add the eggs - you don't want to eat raw eggs! - and adjust it to be a bit sweeter than you want it!

1 teaspoon ground cinnamon
1 teaspoon orange zest
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 egg
1 recipe pastry for a 9 inch single crust pie
1 egg
2 tablespoons dark corn syrup
2 tablespoons brown sugar, packed
1 tablespoon butter, melted
1/2 teaspoon maple flavored extract
1 cup chopped pecans
DIRECTIONS
Boil sweet potato whole in skin for 40 to 50 minutes until done. Run cold water over the sweet potato, and remove the skin. Break apart in a large bowl.
Melt 1/4 cup butter or margarine, and pour it in the bowl with the sweet potatoes. Beat with an electric mixer until smooth. Blend in sweetened condensed milk, cinnamon, orange rind, vanilla, nutmeg, salt, and 1 egg. Pour into the unbaked crust.
Bake at 425 degrees F (220 degrees C) for 20 minutes. Remove the pie from the oven and reduce the temperature to 350 degrees F (175 degrees C).
While the pie is baking, prepare the topping. Mix together 1 egg, corn syrup, brown sugar, 1 tablespoon melted butter, maple flavoring, and pecans. Mix thoroughly. Sprinkle over pie.
Bake for another 25 minutes until set.

Here's my Mother's recipe for Homemade Pie Crust that is flaky and very easy to make and tastes great! I'll find a Sweet Potato Recipes for you; since I don't make that type of pie...
OLGA's PIE CRUST:
4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cup Crisco Shortening
1/2 cup cold water
1 Tablespoon vinegar
1 egg
Stir the flour, sugar and salt together in a medium size bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. In a small bowl beat together water, vinegar and egg. Add to flour mixture until the dough comes together. Gently gather dough particles together into a ball. Wrap in plastic, and chill for at least 30 minutes. Divide into 4 balls. Lightly flour sides of the ball and roll out on lightly floured board or pastry cloth. Makes two 9-inch double-crust pies.
Note: Dough can be refrigerator up to 3 days. It can be frozen until ready to use; thaw until soft enough to roll.

I have been making sweet-potatoe casserole for years and has always been great! Recipe calls for 4-6large sweet-potatoes, boil with skins on, when done run cold water in pot w\potatoes and peels willeasily come off. Mash, add 2 eggsbeaten,1 stick butter,1/2c.sugar,1\2c.brownsugar. Mix together,pour into greased casserole dish. Bake@300 for15min.Topping;1\3stick of butter,1c.brownsugar,1\3c.flour,1c.chopped pecans,pour over sweetpotatoes Bake another 15minutes. .
