The same way you start any other conversation. I must be more clear here. People in this country don't have good manners. Spanish speakers usually do. We begin saying:
buenos días ¿ cómo está usted ?

Lots of ways. Are you looking for a way to start a conversation with someone who knows that you speak spanish, or looking for a way to inform them that you speak spanish? I find an easy way to ease into the topic that I speak spanish is to find a spot to insert a "gracias" into the conversation - but I make sure to pronounce it WELL (listen to lots of spanish speakers saying the word) rather than like a smartass american. Lots of people, for example, can walk into a mexican restaurant and think they're hot stuff because they say "GRASS-EE-ASSSS" to the waitstaff, and their attempt probably just gets ignored. But if you can work on your spanish pronounciation, particularly of the R and A, then you can identify yourself as someone who actually has a clue what they're saying.
As for general conversation starters, they vary depending on country and context. One way to learn some is to watch different tv shows/movies from the various spanish speaking countries, and see how people greet each other. For example, in an informal setting among buddies in Mexico, a common greeting would be, "Qué onda?", whereas a formal meeting in a latin american country or Spain might begin with, "Hola, ?cómo está Usted?"

Buenos dÃas, cómo estás, qué tal, hola, etc. The same way you start a conversation in any language depending on the circumstances and what your intentions are.

Do you mean grammatically or a topic of conversation? ¿Que tal?¿Cómo estas? What kind of Spanish and what nationality? I only know Spanish people. Ask what they were like as a kid. Ask about their family. And they love to tell you how great Spanish food is. Un abrazo.
