Bob. Unless you're thinking of au jus. Au jus is simply french meaning with juice. That is usually a sort of gravy....the blood and liquid that cooked out of the meat is spooned back over it when its served.

I don't think I've heard any word other than "juice", although I'm sure there is one.

Some people refer to it as "blood", however this is incorrect.
