Rosemary Grilled Lamb Loin Chops with Cranberry
and Peppered Apple Relish

Ingredients:
2 tablespoons olive oil
2 tablespoons fresh rosemary leaves, finely chopped
4 double-cut American Lamb loin chops
1 teaspoon salt
4 teaspoons coarse ground black pepper
Cranberry and Peppered Apple Relish (recipe follows)
Preparation:
Combine olive oil and rosemary. Dip chops in mixture. Season with salt and pepper. Cover and refrigerate for 1 hour. Grill over medium-hot coals about 20 minutes or to desired degree of doneness: 145 degrees F for medium-rare, 160 degrees F for medium or 170 degrees F for well. Internal temperature will rise approximately 10 degrees. Serve with Cranberry and Peppered Apple Relish.
Cranberry and Peppered Apple Relish
Ingredients:
1/4 cup dried cranberries
1/4 cup apple juice, heated
1 Granny Smith apple, chopped into 1/2-inch pieces
1/4 cup fresh or frozen cranberries
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon course ground black pepper
1 teaspoon brown sugar, packed
pinch salt
Preparation:
Combine all ingredients. Tip: This relish is best made a day ahead to allow flavors to blend.
LAMB CHOPS WITH BLACKBERRY SAUCE
Serves 4
Every time you see fresh blackberries at the produce stand you should think of this recipe. Call your butcher and tell him to cut you 8 lamb chops and then share this recipe with him.
8 each lamb chop
2 tablespoons peppercorns, red, crushed
1/4 cup dry red wine
1/4 cup veal stock
1/4 cup blackberries, fresh
1 tablespoon unsalted butter
If you don't have veal stock, get some here: http://www.clubsauce.com
Season the lamb chops with crushed red peppercorns. In a hot skillet, brown one side of the chops, lower the heat, and cook the other side until done medium rare ( about 6-8 minutes ).
Transfer the chops to a serving plate to rest for 3-4 minutes.
Return the skillet to a high heat. Pour the wine into the pan and reduce by half. Add the veal stock to the reduced wine, bring to a boil, and allow the mixture to reduce for a couple of minutes. Add the blackberries and butter. Swirl the pan around so the butter melts evenly. Adjust the seasoning with salt and pepper to your liking and pour the sauce directly over the chops.

INGREDIENTS:
12 small loin lamb chops
2/3 cup dijon mustard
3 tablespoons minced orange zest
3 tablespoons fresh thyme leaves
4 teaspoons packed light brown sugar
salt and pepper, to taste
Find sheep that is less than 1-year old(lamb). Kill lamb. Dismember animal. Trim excess fat from lamb chops. Mix orange zest and thyme into a paste. Add mustard and brown sugar. Mix together. Preheat grill. Brush about half of the mixture onto each side of the chops and place on hot grill for about 2 minutes per side

You have a lot of good choices here - these people mostly know what they are talking about. The most important thing is to look in the temperature chart and see what internal temperature for lamb and use a meat thermometer. If you overcook it - it is dry and cheewy and will give you a bad impression of lamb. It is excellent and if you do it right you may just buy it again on purpose. It is done when it is "pink" inside so you better be ready for that.

You can broil them the same way you do veal chops. You can put a little garlic on them. You can also use some spices. Good lamb chops need nothing on them! As a side, mashed potatoes, possibly with something mixed in them like garlic or flavoring. Many people like mint jelly with their lamb chops (i personally do not.) Most any vegetable goes with them also.

Marinate your lamb chops in olive oil, lemon juice, garlic and either mint or rosemary. Its just a marinade...you do not have to get technical with the measurements here.
Serving your lamb with something as simple as a baked potato and a veggie OR something a little nicer like couscous and a veggie will be fine.

Pan Griddled Lamb Chops
Serves 4
Ingredients:
1 each cucumber, diced
1 each tomato, diced
1/2 cup feta
1 tbsp. chopped mint
1 tsp. chopped parsley
2 oz. balsamic vinegar
2 oz. extra virgin olive oil
salt and pepper
2 baby Lamb Chops, Individual
1 tbsp. extra virgin olive oil
1 tbsp. butter
Procedure:
Mix the cucumber, tomatoes, feta, parsley, balsamic and olive oil together. Season with salt and pepper and place on a plate. In a medium hot sauté pan, sear the lamb in one tbsp. of olive oil. Cook for about 3 minutes on each side for a medium temperature. Place on top of the salad and serve at once.

Grill the chops, about 4-5 mins each side so they are still a little pink.
Boil some potatos, add cream a clove of garlic a good sprig of Rosemary, some cream, butter, salt and pepper and mash the hell out of that.
Veg of your choice after that.
Don't forget the mint sauce on the side

though i can't stand the idea of eating someone's baby, a simple pork chop recipe would work for your dining dillema. place enough flour in a paper bag or lidded container to cover all the meat. salt and pepper to taste. garlic if you like. as for a side, green beans sauteed with fresh onion, bacon, and sausage. when the beans are about 10 minutes from being done, add a can of italian tomatos. finally, roast some quartered baby red potatos seasoned with oregano and basil. desert is up to you.

They are great on the barbaque. Put a little Mrs. Dash seasoning on them. Cook them just like pork chops. Or broil them. Serve with mashed potatoes and a veg.
