depends if the subs are all the same accept for size i would use 1 amp as long as the amp is not more power than the subs can handle and the subs aren't drawing more power than the amp can supply (if each subs rms is 200watts get a 1000 watt amp) it is just more than the rms and less than the subs max. or you could get a 4 cannel amp and bridge 2 subs to 2 cannels and so on.

It is not required to have 2 amplifiers, however it would be a LOT better and would lower your risk of blowing a sub.
