Cocoa Pudding Cake

1 cup All purpose flour
3/4 cup Sugar
2 tbl Cocoa powder
2 tsp Baking powder
1/2 tsp Salt
1/2 cup Skim milk
2 tbl Oil
1 tsp Vanill
Nonstick vegetable spray
3/4 cup Brown sugar
1/4 cup Cocoa powder
1 3/4 cup Hot water

Method :
1. Sift together the flour, sugar, 2 T of cocoa powder, baking powder, and salt.
2. Add the milk, oil, and vanilla, mixing by hand untill smooth.
3. Pour into an 8x8x2-inch baking pan that has been sprayed with nonstick spray.
4. Combine the brown sugar, 1/4 c cocoa powder, and water and pour over batter.
5. Bake at 350 degrees for 45 minutes.

QUICK CHOCOLATE MOUSSE

1 (6oz) pkg. chocolate chips (or 6 oz choc pieces)
2 whole eggs
1 c. milk, scalded
In a blender combine eggs and chocolate chips. Add SCALDED(heat just UNDER boiling) milk (you can add a few drops of mint or orange extract in if you have it, but not important or required).
Pour into four dessert cups (haha.. use coffe cups or whatever) and chill 2-3 hours. You can top it when serving with whipping cream, nuts, whatever,(kahlua), just like a sundae, but best left plain.

FLAN (preheat oven to 325)

1/2 c. sugar
4 eggs, separated
3 pinches of salt (you didn't list this, but may have on hand)
2 c. milk
Caramelize 1/4 cup sugar (heat slowly until it becomes liquid and brown in a small saucepan, stirring all the time to avoid burning it). Pour into bottom of 5 custard dishes (or something small that you can put in oven safely). Place these in a pan (that can go in oven) of hot water and bake at 325 for 1 hour and 10 minutes (or until knife inserted in center comes out dry)

I'm not sure about the pudding, but you can make a basic chocolate or white cake with your ingredients. Try yumyum.com for good cheap recipes.
