Capybara, or chiguiro, is a rodent roughly the size of a cocker spaniel dog. It is a protected species from the Amazon and orinoco basins in South America. They are also exotic, and the trafficking in them is highly illegal. They are hunted under permit in some areas of Colombia, Venezuela and Brazil. If you ever find anywhere in th US that serves a dish made out of a dog-sized rodent, call the Department of Health.
