When liquid splashes me, none seeps through. When I am moved a lot, liquid I spew. When I am hit, color I change. And color, I come in quite a range. What I cover is very complex, and I am very easy to flex.

I'd say skin.
When splashed, skin doesn't absorb the liquid.
If you move a lot, you sweat.
When you get hit, your skin turns black and blue.
Skin comes in lots of colors.
It covers the human body.
It flexes when you move.
