Well for the most tender cut it is called the catfish loins.They are located along the backbone just under the backstraps.On a adult sized deer it is around 10 to 12 inches long and 2 to 3 inches in diameter.the main choise for most people is the backstrap tenderloins.They run down the back on both sides of the deer.On the adult deer they are 20 to 25 inches long and 5 to 7 inches in diameter.Both are the best cuts but the catfish loins are buy far the best just isn't very much of them.Hope this has helped you.

The inner loin is by far the most tender, so tender you can pull it off the spine with your hands when cleaning the deer.

i agree the cat fish loins are the best but not very big, then the tender loin { back strap} we eat those steaks before they make it off the grill. but any one can screw up a good steak if they don't know how to marinade and grill it. i have a great marinade if you are interested. a lot of people who never have cooked wild game don't care for it cause they don't really know how to cook it.

The backstraps are the best of the deer. Like the fillet of the beaf.

sweet meat the inside straps thats the best cut but its all really good but if you want tender meat get a young deer it will melt like butter or just beat your meat lol(tenderise it)

either the back-straps or the tenderloin, and of course the size,age & sex of your deer makes the biggest difference> happy eating!!

now for steaks maybe a back-hind leg??? but i always go for the tenderloin first... i think thats the most tender...
