Forget different recipes and such answers, I used to live in the same road as a baker and was told why their famous bakery could never be touched by supermarkets.

It is the ovens they use.

When you have made thousands of cakes, rolls and bread the oven takes on a certain flavour. This is similar to a Tandor for producing a tandoori flavour or a Wok that is not washed clinically but is covered in oil.

The oven is porous and takes on that authentic flavour - whereas supermarkets use modern ovens that will never produce the same flavour how ever hard they try.

It's because when you get a cake from a supermarket if you get a already packaged cake it's not as fresh as just going to a bakery or the bakery in the supermaker if available you will get a fresh baked cake in most cases, depends on what you buy. But the best tasting cakes are the ones that you order and shop while there being made or arrange for a time for you to pick them up and specifically tell them you want it fresh.

9 times out of 10, the only difference is the frosting. Some specialty bakeries make their cakes from scratch, but a large number of them actually use mixes because they provide consistent results that you dont' get with scratch.

I love cake mix cakes because that's what I was raised on and I hate the taste of scratch cakes. To me, there's something about a scratch cake that doesn't taste right that I can't put my finger on. But there are certain grocery stores (Safeway for example) that their instore bakeries are disgusting and don't taste anything at all like cakes you get elsewhere. Walmart has the best bakery cakes I've ever had.

I think they use some preservative in the ones available at the supermarket and they are mass produced. They don't taste as good as the one you get at the bakeries but stay longer.
