Quickly fry some courgette, peppers, mushrooms, roughly chopped onion, chickpeas, put in the lamb to reheat, some chopped tomatoes, season, add a bit of cumin. Serve over couscous. Quick and simple.

Grind it or chop it finely and make a lamb salad sandwich spread with chopped pickles or relish and some mayo.

Another good use is to make a shepherd's pie. Mix with some gravy or broth, add whatever veggies you like, and other leftovers work fine, and top with rich mashed potatoes. Bake until the 'taters brown. Add some grated cheese to the potatoes or on top for even more flavor if you like cheese.

Make a kind of hotpot:
place chunks of lamb in a casserole dish with any leftover gravy, to which you add a couple of carrots and an onion cut into chunks. Add some extra stock or water to top it up. Peel and slice about 400g or 1lb of potatoes and slice to 5mm/1/4inch slices. Rinse potato slices in water and dry on kitchen paper. arrange over top of meat and veg. dot with butter or brush with oil and season. Place lid on casserole and cook at gas 5/180 degrees for 1 hour, removing lid 15 mins before the end to brown potato. serve with lots of lovely peas and mint sauce, or sweetcorn for children. Cook it with garlic, lots of diced red onions, some tomatoes, red wine, bay leaf, seasoning, tomato puree, Worcestershire sauce and some bullion stock for ages to let all the yummy flavours muddle together and top with mashed sweet potato and mashed parsnip mixed up. Sprinkle some feta and cheddar mixed on top and cook in a pre heated oven

Fajitas! get some wraps, fry the lamb off with some peppers, onions and mushrooms. sour cream, cheese and a bit of salad in the wrap, add your lamb and veg et voila!!! yum!!!

cube ...make a batter add to the batter spices any you fancy coat cubes of lamb deep fry buy a sweet and sour sauce and hey presto...

cut lamb up into bite size pieces add various veg bring to boil thicken and you have lamb stew
