You are so right! It is extremely unhealthy to say the least, mayo is practically nothing but raw eggs, white refined sugar and about 1000 really unhealthy chemicals and preservatives............

(If you can get yourself off it for awhile, you will begin to find the taste REALLY nauseating!)

Because mayo is used so much in cooking, I have developed some very good substitutes: as someone mentioned, yogurt is good but sour cream (or Mexican cooking cream) is much better I think. When I use either, I like to make a "dressing" to fit the occasion. For potato salad, I mix sour cream (or yogurt) with dijon (or regular) mustard, garlic, pepper, salt, cilantro (or parsely) a dash of lemon and Worchestershire sauce and paprika.

For Deviled Eggs, I use a similar mix for the egg yolks, works great. My 12 year old and his 15 cousins ALL prefer my Deviled eggs and potato salad (with substitute) over their aunts' (with real mayo)

For hamburgers: There is so much you can slab on a burger, mustards, catsup, salsas, tabasco, steak sauce, BBQ sauce, why the hell does anybody need to put the "white death" on a burger?

Turkey (and chicken sandwiches) - real simple, a nice mild dijon mustard will give SO MUCH more flavor with SO MUCH less body poisons .........

(you should check out some web sites about "soy milk" etc. a lot of Doctors are beginning to say that "soy" and other "vegan" protien sustitutes are EXTREMELY UNHEALTHY for humans.... just a tip....)

Many vegetarians prefer to stay away from animal products altogether, this mayonnaise substitute will help.

1/2 cup of soy milk
1/4 teaspoon mustard
2 teaspoons of lemon juice
Dash of salt
1/4 teaspoon of paprika
6 teaspoons of vegetable oil

Combine the soy milk, mustard, lemon juice, salt, and paprika in a blender. Use a low setting and do not over mix. Slowly add the oil, one drop at a time. This will cause the mixture to thicken. Once all the ingredients have been added, mix until a smooth texture is achieved. As with regular mayonnaise, keep it refrigerated.
Makes about 3/4 cup.

You can also try
sour cream
or
yogurt
or
cottage cheese pureed in a blender

I'm still working on my mayo substitute, but so far it seems to be superior to mayo whenever I make food, but I'm still working on perfecting the recipe, and testing it on things...

1 Tablespoon Greek Yogurt
1 Tablespoon Sour Cream
1 Tablespoon Egg
1 Tablespoon Sugar
1 Tablespoon Olive Oil
2 Tablespoons Flour (for thickener)
2 Teaspoons Balsamic Vinegar

unflavored yogurt it gives whatever uses mayo the moisture it needs and it is much healthier then using mayo but I don't recommend on burgers lol of tuna salad or potato for things like that you may want to go with a healthier mayo
