Grilled Honey Mustard ChickenSkinless & boneless chicken breast halves are marinated in a mixture of mayonnaise, Dijon-style mustard, and honey before grilling.Ingredients:
• 4 skinless, boneless chicken breast halves
• 1 cup Salad dressing or mayonnaise
• 1/4 cup Dijon-style mustard
• 1/4 cup honey
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
Method:
In a bowl mix salad dressing, mustard, honey, salt and pepper. In a ziplock bag place chicken and pour honey mustard over chicken, reserving 1/2 cup. Let marinate at least 2 hours, overnight is even better. Removed chicken and discard the marinade. Grill chicken about 10 minutes each side. The last few minutes brush with reserved honey mustard.

how about chicken pot pie. Take chicken broth bring it to a boil. Add celery and potatoes sliced thin. Then add your dough. Boil it until the dough is soft then add your cooked chicken. You can buy store brand or I like to make my own. It is just flour, egg, salt, and water. Roll it out as thin or thick as you want. I cook mine for an hour but if you use store brand follow the directions on the package.
Also how about chicken corn noodle soup. Or my sons favorite chicken and waffles with gravy. I serve it with mashed potatoes and a veggie.

how about chicken fried rice
get your chicken and break into pieces
make your rice
get you a can of peas and carrots
get you some soy sauce(only enough to turn the rice brown)
scramble one egg
mix all together and chow down
chicken alfredo
cut your chicken into pieces
make you some fettachini(spelled wrong I'm sure)
open a jar of alreado sauce
boil for a few min. some frozen broccoli
mix all together
and bake you some garlic bread
your good to go

I call this Rio Rancho Chicken. Need 4 bonless, skinless chicken breasts, 1 16oz can crushed tomatoes, 1 8oz can pitted black olives, 1 med yellow onion sliced & sauted in 2 tbs olive oil until soft & carmelized. Season chicken, brown in oil and transfer to crock pot or casserol dish. Add tomatoes, olives & onion. Slow cook for at least 2 1/2 to 3 hrs.

"Festive Fajitas" - 8 servings
1 1/2 lb. boneless chicken; skinned
1 (14 1/2 oz.) Del Monte Mexican-Style Stewed Tomatoes
1/4 cup lime juice
1 tbsp. chopped jalapeno chile
2 cloves garlic; crushed
1 tsp. oregano
1 tsp. chili powder
1/2 tsp. ground cumin
1/4 cup chopped cilantro
1 onion; cut into 1/2" slices
1 tbsp. oil
1 (7 oz.) can whole green chiles; drained and cut into strips
8 flour tortillas; warmed
Score chicken on both sides. In blender container, combine tomatoes, lime juice, jalapeno, garlic, oregano, chili powder and cumin. Cover and blend thoroughly; stir in cilantro. Reserve 1 cup sauce. Pour remaining sauce over meat; cover and marinate in refrigerator several hours or overnight. Skewer onion slices lollipop style; brush with oil. Grill onion and chicken as desired. Thinly slice meat across the grain. Fill warmed tortillas with chicken, onion rings, green chile strips and reserved sauce. Garnish with sour cream, avocado or guacamole, if desired.

chicken caserole...
boiled chicken, then cut up in cubes..set aside
shreeded cheese about 2 cups or so.
two bags of the lipton chicken noodles, prepared with the instructions on the back...
when the noodles are 1 minute from being done, add a can of corn.(drained)
then when the noodles are done, add the cheese and chicken.
stir until the cheese is melted..
and top with or without sour cream.

Try covering the chicken with Gummy Bears or Skittles or Fruity Pebbles. Kids love that crap. Or put a little cowboy hat on it and call it 'cowboy chicken'. What kid wouldn't eat 'cowboy chicken!"

Don't know if the kids will like it, but one of my favorites is Chicken Kiev (you can find lots of recipes on-line). Another one is Chicken Cacciatore.
The real trick is to be sure the chicken is in some sort of sauce or something, so it doesn't taste "dry."

How about chicken stir-fry? I made it tonight for me and my 18-month old son and he loved it. My wife loved it when she came home 2 hours later.
Just cut up chicken and fry it in a seperate pan. Slice up whatever vegetables you like (I used carrots, celerey, onions, green pepper, and canned mushrooms) fry them up and add the chicken. Add a tsp of chicken soup stock, along with the thickener (1/4 cup of cold water with 2 tbsp of corn startch) and dump it in. Fry it up until the vegetables are as crisp as you like them.

boil chicken with rice and then add thick sliced linked smoke sausage-can cream chicken can cream celery- pepper- salt.
