should you use a rub AND an injected marinade? I just bought a turkey fryer and it comes with an injector... whats the BEST marinade/rub out there for frying a turkey??

MARINADE FOR BARBECUE CHICKEN OR
TURKEY

1/2 c. dry vermouth
1/2 c. fresh orange juice
1/2 c. fresh lemon juice
1/2 c. fresh lime juice
5 cloves garlic, minced
1/4 c. yellow onion, minced
1/2 c. fresh parsley, minced

Mix all ingredients in a jar with a tight fitting lid. Shake well and marinate chicken or turkey for several hours or overnight. Keeps 2 weeks in the refrigerator.

Makes 2 cups.



MARINADE FOR TURKEY OR CHICKEN #2

3/8 c. lemon juice
2 tbsp. olive oil
1/4 c. dried onion flakes
1 tbsp. dried tarragon

Mix and pour over meat or poultry several hours or overnight, then grill on the bar-b-que. If the grill is too hot to finish cooking, finish in the microwave after browning (burning?) well on the grill.


Herb Turkey Rub

This is a great rub for turkey anyway you plan to cook it. It really is best that you use fresh rosemary because you want the oils from the rosemary to season the turkey.

INGREDIENTS:

1/4 cup white wine worcestershire sauce
1/4 cup olive oil
4 teaspoons fresh rosemary, chopped
4 teaspoons fresh thyme, chopped
4 teaspoons onion, minced
4 teaspoons garlic, minced
2 teaspoons salt

PREPARATION
:
Combine all ingredients and mix well. Store in the refrigerator.


Thanksgiving Turkey Rub Mix

3 Tbsp. chopped fresh rosemary or 1-1/2 Tbsp. dried
3 Tbsp. chopped fresh thyme or 1-1/2 tsp. dried
3 Tbsp. chopped fresh tarragon or 1-1/2 tsp. dried
1 Tbsp. ground black pepper
2 tsp. salt

Mix together in small bowl or small jar if keeping for awhile (only if using dried herbs.)

To use:

Pat turkey dry with paper towels and place on rack set in large roasting pan. Tie legs together loosely to hold shape of turkey. Brush turkey with a little olive oil. Rub herb mix all over turkey (underneath and on top.)

Then roast turkey as you usually would.

I have also used this on chickens before roasting and also on turkey or chicken cutlets before cooking on the grill.

I would reccommend that you do not marinate and rub. Either one of them is OK.

Rub n inject is the best way!

/2 c. dry vermouth

2 c. white Sauterne Wine
1 c. peanut oil
1 c. soy sauce
2 tsp. garlic salt

Combine wine, soy sauce, oil and garlic salt. Put turkey breast in "brown-in bag" cooking bag. Put marinade in the bag. Squeeze so marinade is over the turkey and put twister onto hold as is. Leave at least 2 hours, can be left overnight or longer. When ready to cook put breast in heavy foil and bake on 325 degrees for 3 hours.
Save marinade, can use on chicken breast (I strained mine to get any meat out). Also use marinade for gravy.

Injected works best because a rub frys off. I like to use melted butter, brown sugar, and lemon juice. I don't use a lot of spices with it because the most tasty aspect is the skin. By the way you are making me drool!!

You know you're going to have both moisture and flavor by the injection method - but there's no reason you can't put some lovely herbs over the turkey as well.
