A few weeks ago, I made a lemon bundt cake from a cake mix. I added about 1/2 cup of sour cream (it doesn't alter the taste, but makes the cake very moist). After I took it out of the pan, it started to slowly (but definitely surely!!) "fall", or sink into itself. (compressing the cake). IT was no longer a large fluffy cake, but a shorter, denser one. it was still ok, but I am making another lemon bundt cake tonight (from cake mix) and want to know how to prevent this.

I think a cake falls because it gets disturbed (like the oven gets shaken) or the cake cools too quickly. Try turning off the oven about 3 minutes before the timer goes off, and leave the door closed for about 15 minutes before taking it out.

Your cake was TOO moist. Next time, sub the sour cream for other ingredients called for. Dont' just add it on top of the oil, eggs, and water. Then cool completely in the bundt pan before removing it. When the cake is still warm, it will change shape.

I'd consider also adding a 1/4 cup or so of regular flour to your cake mix for a bundt cake. Most mixes are too tender to do very well ina bundt pan.

Yes you can use any mix for a Bundt cake, just make sure the box is around 18oz. You can zest some lemon into the batter for a slight lemon taste. Glaze 1 1/2 cups confectioners' sugar 8-10 teaspoons lemon juice (use as little as you want) 1 tablespoon corn syrup lemon zest (to garnish) To make the Glaze In a medium bowl, combine lemon juice and confectioners' sugar. Beat in the melted butter and 1 tablespoon water. Poke holes in the top of the cake and pour glaze over.

ok the sour cream had nothing to do with it when you are baking the cake make sure that you follow the recipe and you preheat your over failing to do this may make your cake fall and when it is baking do not open the door checking on the cake let it bake for the time it tells you to bake it and then don't have people walking in the kitchen this may also make a cake fall and make sure the oven is as hot as it tells you to put it and you should be ok and also to make it even fluffier instead of oil try non flavored or vanilla yogurt this also makes it really moist and doesn't have the fat or the oil

Interesting, that has happened. It did not necessarily fall because it was distrubed. It was fluffy and as it cooled it just decreased in size.. It was also lemon. now the Chocolate one and the other flavors do not do that. I make them all with buttermilk and pudding mix. i baked it again but let it stay in for about 3 min longer. It did not sink like that. But isn't interesting that it is only the lemon ones.
