You can always dye it. You can use some carrot juice or pureed sweet potato if you want natural color. I rather like the idea of having my pies look different than those prepared with a canned filling. Remember too, the pumpkin will darken some from the nutmeg and during baking.

Did you use a pie making pumpkin ? The small pumpkin that is very dark orange?

It should darken when cooked, don't worry about it. Yours is fresh pumpkin, and will probably taste BETTER!! You could add some cooked, mashed yams (or sweet potatoes) to make it darker. Sweet potato pie is delicious!! Canned has preservatives and probably food coloring.

the chemicals they put in the canned pumpkin makes it that orange color. i suggest Food Dye.

Food Color but the reason why it looked that way(the canned ones) is because of the preservatives.

Add your spices into the puree, like cinnamon, cloves, nutmeg.
