herbs de provence - a blend of rosemary, marjoram, basil, savory, thyme and lavender. Thyme is used quite often on it's own.

This is a hugely loaded question. What part of France are you talking about? The southwest will have more italian focused seasonings while the northeast has more of an enligsh feel and northwestern France has a German touch. France is the center of western europe and has been historically impacted by all its neighbors. So the country as a whole has many varied regional cuisine styles. That being said:

Salt and all different kinds of Pepper
Tarragon
Fennel
Lavender
Rosemary
Sage
Thyme
Marjoram
Oregano
Garlic
Mustard
Cilantro (called Corinadre)

And the list goes on.

Tarragon is used in cooking poultry and white sauces.Use it with a light hand though.
