Since Rabbit meat is tough the best cooking method is to braising it. What ever part you decided to cook whether it being the loin or the entire rabbit Brown the Rabbit on all sides add chopped onions carrots and celery saute until golden then add red wine to deg laze the entire pan with the vegetable inside, Watch out for the flame depending on your choice of wine. Next add the rabbit into a pot with the wine and vegetables a table spoon of tomato paste and cover with beef stock enough so that it will be covered by about 3 inches. Cover the pot with a lid or aluminum foil and place in a 225f oven. Check every two hours and in eight hours or when the meat is falling off the bones your done. Remove the meat from the pot. Then reduce the liquid into a sauce. You can do this by naturally reducing it or by thickening it cornstarch.

Serve this with a nice hearty robust red wine and some simple garnishes and your set for a awesome meal.

as you probably know rabbit the most easily digestable meat there is. skin it firs (der) rabbit can cooked pretty much like chicken so find your favorite chicken recipe and go from there. tame rabbits are better than the wild ones in my opinion.

I too, don't much care how "digestible" it is, Its certainly NOT my favorite. But I would look up recipes for Mexican "mixote." Its a favorite recipe in central Mexico using mutton, chicken or rabbit.

Having had both the mutton and chicken "mixotes", I can tell you it is simply delicious!

My Dad Raised Rabbits for the meat & He just cooked them EXACTLY Like you do chicken.
