Yes, I do plus a recipe for Kugelis, which is similar to a potato pancake; only better! Being 1/2 Lithuanian, I grew up eating potato pancakes with sour cream. Some people eat them with applesauce instead. If you like these---chances are that you'll like Kugelis too....

POTATO PANCAKES: (Blynai's)
6 Tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
6 medium sized potatoes, peeled and grated
1 small onion, grated
1 egg, beaten
Sour cream
Sift together flour, salt and pepper into small bowl and set aside. Wash, peel and grate potatoes and onions in large bowl. Stir in beaten egg. Add dry ingredients into potato mixture and stir until blended. Spoon mixture onto hot oil in skillet and fry until brown and crispy on both sides. Drain on paper towels and serve with sour cream.

ESTHER's KUGELIS:
2 lbs. bacon
1 small onion, chopped
6 potatoes, grated
4 to 5 Tablespoons flour
1 Tablespoon salt
1/4 teaspoon pepper
3 eggs, beaten
1/2 cup margarine
1 small can evaporated milk
Sour cream
Fry bacon and onions until soft; drain off grease. Wash and grate potatoes in large bowl. Add flour, salt, pepper and mix well. Blend in eggs, margarine and evaporated milk. Stir in bacon-onion mixture. Pour into greased baking dish. Bake at 450 degrees for 45 to 60 minutes or until top is nicely browned. Serve with sour cream.

German Potato Pancakes:

2 large eggs
1 small onion, chopped
1 teaspoon baking powder
3/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 pounds russet potatoes, peeled and cubed
1/4 cup all-purpose flour
sour cream

Process first 5 ingredients in a blender until smooth. Gradually add cubed potato and flour, processing until mixture thickens.

Pour about 1/4 cup batter for each pancake onto a hot, lightly greased nonstick skillet; cook over medium-high heat 1 1/2 minutes on each side or until browned. Dollop with sour cream.

Yield: Makes 12 (3-inch) pancakes

NOTHING FANCY - OLD FASHIONED POTATO
PANCAKE

Peel 4 or 5 potatoes, cut up and put in blender and grate. Or to do the old fashion way, grate with a hand grater. Add 1 egg, salt and pepper to taste and enough flour to thicken to a good pancake batter. Add chopped onion if desired. Cook on well buttered hot pan, turning over once. Good for breakfast or as a side dish with dinner. Top with plenty of butter.

Potato Pancakes 2

INGREDIENTS
5 pounds potatoes, peeled
1 onion
3 eggs, beaten
2 1/2 cups dry pancake mix
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon vegetable oil
DIRECTIONS
In a food processor grate potatoes and onion. In a large bowl combine potatoes, onions, eggs, pancake mix, salt and pepper.
Heat oil in a large skillet over medium heat. Spoon potatoes into skillet and cook as you would pancakes, for 3 to 4 minutes on each side.

Potato Pancakes

The Fixin's

2 lbs. Potatoes, all purpose
3 Eggs, beaten
4 oz. Onions, minced
2 oz. Flour
1 Tbsp. Baking powder
Nutmeg, to taste
Salt and pepper, to taste
4 fl. oz. Vegetable oil

Gettin' it all together:

Peel and coarsely grate potatoes.

Transfer the grated potatoes to a bowl and add the beaten eggs, onions, flour and baking powder. Season with nutmeg, salt and pepper. Blend well.

Heat the oil. Form the potato mixture into 12 uniform-sized pancakes and pan-fry them until tender, turning once when well browned on the first side. Remove them and drain well.

POTATO PANCAKES (Latkes) FOR HANNUKAH
4 med. potatoes
1 sm. onion
1/2 c. pancake mix
1/2 c. oil
1 tsp. salt
2 tbsp. sour cream
2 eggs
1/2 tsp. pepper
Peel potatoes and grate into a bowl. Pour off extra liquid. Peel onion and grate into potatoes. Add eggs, pancake mix, sour cream, salt and pepper. Mix well.
Heat oil until it sizzles. Drop a tbsp. at a time of batter into hot oil. Flatten with a pancake turner. When bottoms are brown turn them over. When done remove and drain on paper towel lined plate. Serve with applesauce, sour cream or just plain.

POTATO AND APPLE PANCAKES
Beat together: 2 tbsp. flour Salt & pepper
Peel and chop:

Heat oil in large skillet. Pour in 1/2 cup batter for each pancake and flatten. Cook until golden brown (4 minutes per side). (Soaking potatoes in cold water will remove starch.)

GERMAN POTATO PANCAKES
Combine and set aside 2 tablespoons all purpose flour, 1 1/2 teaspoon salt, 1/4 tsp. baking powder and 1/8 teaspoon pepper. Wash, pare, finely grate and set aside 6 medium size (about 2 pounds) potatoes, about 3 cups grated. Heat in a heavy skillet over low heat, fat enough to make a layer 1/4 inch deep.
Combine the flour mixture with: 2 eggs (well beaten), 1 tablespoon grated onion and 1 tablespoon minced parsley. Drain liquid that collects from grated potatoes. Add potatoes to egg mixture and beat thoroughly with spoon.
When fat is hot, spoon about 2 tablespoons of batter for each pancake into fat, leaving about 1 inch between pancakes. Cook over medium heat until golden brown and crisp on one side. Turn carefully and brown other side. Drain on absorbent paper.
