When serving wines, it's best to use a large-stemmed glass filled a little more than halfway? or Would it be best to use a small tumbler filled a little more than halfway?

Depends on who where, when and why. Formal =wine glass,.... tumbler's=casual. No hard rules unless it's TERRIBLY formal.

Large-Stemmed glass LESS than halfway. And hold the glass by the stem or base, not around the wine itself. This allows the wine to stay relatively at the same temperature, and allows it to breath. I have red wine glasses that can hold 30 oz, but never put more than about 8oz in at a time.

Depending on the occasion, place and service style - both. If it is a formal or stylish setting a stemmed glass is traditional, a casual environment a tumbler. Your fill level is correct in both instances. By the way Reidel, a noted wine glass maker, has begun to make wine tumblers for fine restaurant use as it reduces breakage.

It is better to serve wine with a large glass - so u only fill it a little more than halfway. to get the most of wine (esp. red wine), the wine has to enabled to breathe. therefore larger glass is better than smaller ones..

The stemmed glass supposedly cups the wine smell ( bouquet) so you can smell it better. Also, for wines that are served chilled, they stay cooler longer in the stemmed glass.

But I don't really think there is anything correct about wine,
just convention. Conventions change.
