John is correct, there is a sauce chef and also someone called a sous chef.
As John stated a sauce chef creates the sauces for meals.
A sous chef is like second in command and assists the head chef.

A Sous-Chef is a chefs assistant
never really heard of a sauce-chef but as a Sous-Chef you would have many jobs assisting the Head Chef.
The length of time in culinary school would depend on the type of chef and the grade of school.
But remember cooking, being an assistant to a Head Chef is a lot more than sauteing veggies.... it can be very stressful..........(I'm not being a smart-as* ok ) Good Luck : )

If you've never worked with a Head Chef before you don't know how demanding they can be They an chew you up and spit you out in a second

Don't know about a Sauce Chef, but here is a Sous Chef...

A direct executive assistant of the executive chef, the sous chef often shares some duties with the executive chef, such as menu planning, costing and ordering. Kitchens often have more than one sous chef, with each having his or her own area of responsibility, such as the banquet sous chef, in charge of all banquets, or the executive sous chef, in charge of all other sous chefs.
