First, I'd start with a bechamel. It's a basic sauce and you can add pretty much anything to it. I love adding a little cheese and then cooked elbow noodles, bake it with a little bread crumb topping and you have delicious mac and cheese.
Sauce Bechamel ~ A Quick Recipe
4 Tablespoons unsalted butter
4 Tablespoons flour
2 cups cold milk
1/2 teaspoon salt
1/8 teaspoon white pepper
dash of nutmeg
1 teaspoon sugar
1. Melt the butter in a skillet.
2. When it has stopped foaming, stir in the flour and cook, while stirring, for 3 minutes. Make sure it does not brown.
3. Whisk in the cold milk, nutmeg, salt, pepper and sugar.
4. Continuing to stir, cook for until thickened.
5. If you plan to use as a plain sauce, stir in a little cream.

creamy sauce
INGREDIENTS:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup heated milk
1/3 cup heavy cream
salt
white pepper
freshly ground nutmeg (optional)
Few tablespoons dry white wine, a few teaspoons mixed fresh herbs, Parmesan cheese, etc.
PREPARATION:
Melt butter in a saucepan over medium heat. Add flour and stir until mixture is well blended. Gradually stir in hot milk. Cook over medium heat, stirring constantly, until sauce begins to boil and thickens.
Simmer, stirring frequently, over very low heat for 5 minutes. Stir in cream and wine, if using. Season with salt and pepper to taste and add a little nutmeg and herbs, if desired. Makes about 1 1/4 to 1 1/2 cups of medium thick sauce

Fast. Easy Creamy.
OK there are some really good prepared sauces on the market these days. Combining them to fit your tastes is easy.
Try Four cheese and add a good pesto to it and you have creamy pesto.
How about Four cheese (1/2) and marinara (1/2). (add some hydrated sundried tomatoes to it and ymm).

It depends on what it's for or with, here's a
Marinara Sauce
Ingredients
• 1 large onion, chopped (1 cup)
• 5 cloves garlic, minced
• 2 tablespoons olive oil
• 1½ lbs uncooked Italian sausage, casings removed, if present
• 2 15oz cans tomato puree
• 1 tablespoon dried basil, crushed
• 1 tablespoon dried parsley flakes
• ½ teaspoon salt
• ½ teaspoon black pepper
• 1 bay leaf
• 1 tablespoon sugar or honey (optional)
• Hot cooked pasta
• 1 14½ oz can tomatoes, cut up
Directions
1. In a Dutch oven or kettle, cook onion and garlic in olive oil 5 minutes until onion is tender, but not brown.
2. Add the uncooked Italian sausage and cook until meat is brown. Drain fat.
3. Add the tomato puree, the undrained tomatoes, basil, parsley, salt, black pepper, and bay leaf. Add the sugar or honey, if you like. Bring the marinara sauce to boiling; reduce heat.
4. Cover and simmer for 2 to 3 hours, stirring frequently. Remove and discard the bay leaf. Serve marinara sauce over hot cooked pasta. Makes 8 servings.

Cheese sauce OK?
one pound block of sharp Cheddar i like yellow. two or thee cups milk and a dash of Worcestershire sauce. Melt in a sauce pan and add wondra all purpose flour to make desired thickness. serve with broccoli it great.
Or chicken cream sauce
1 can chicken broth
1 cup milk
1/2 to 1 cup wondra all purpose flour
salt and pepper
Combine in sauce pan and heat you might need to add some water if it is too thick
Add in chicken to the sauce and serve with rice and or stuffing and peas
