I want to learn how to make vadai. The ingredients used should easily bought in Singapore. If anyone has a simple recipe, please share with me.

Urud Vadai (Medhu vadai)

Soak 1 cup urud dal in sufficient amt of water for 1 hour and grind into a thick fine flour. Add 1 tsp salt, 2-3 chopped green chillies, 1 tsp whole black peppers, a bunch of curry leaves and mix well. On a plastic piece of paper place a ball of this and flatten it by hand. Deep fry this in oil and turn over until the vada turns golden brown.

Masala Vadai recipe

Description
A South Indian Sanck - very tasty & tempting.

Ingredients
Channa dhal 1 cup Onions 2 small finely minced Green chilles 3 Red chilles 3 Ginger finely chopped Curry leaves a few Perughayam Cilantro a small bunch washed and finely chopped Salt to taste Oil for deep frying

Preparation
Soak the dhal for 1 hour in water. Grind coarse mixture with red chilles. Add mined onions, green chillies, ginger, cilantro, and curry leaves. Add the Perugaham powder & salt -mix well - take a small ball of the mixture, slightly flatten in the palm of yr. hand then place in the hot oil - deep fry on both sides to a godlen bwon. Remove drain & serve with chutney.

Vadai

Ingredients
1 cup black mung dhal ( skin removed ), washed and soaked for 4 hours
1/2 level teaspoon cumin
1/2 level teaspoon salt
1 green chilli, finely chopped
6 small onions, finely chopped
oil for deep frying


Equipment
Banana leaf
Blender
Chopping board
Cook's knife
Deep frying pan
Frying slice
Mixing bowl
Paring knife
Tablespoon
Teaspoon



Method
1 Grind the soaked mung dhal to a fairly fine paste in the blender.

2 Pour the paste into the mixing bowl and add the cumin, chilli, onions and salt. Mix well.

3 Heat the oil in the pan.

4 Shape the mixture like a doughnut on a small wet piece of banana leaf.

5 Slide the "doughnut" gently into the hot oil and fry until golden brown.

6 Repeat for the rest of the mixture.

7 Drain off excess oil on paper kitchen towel. Serve hot or cold.
