Glad to answer. One of my favorite meals.

Ok, buy the point cut instead of the flat cut is is more tender. (flat cut is ok if you want tho)
Remove from package and rinse well to remove as much brine and salts as possible.
Reserve the pickling spice pack.
Fill a dutch oven (you can use a crock pot) 1/2 full of water and bring to a boil. Add 1 can beef broth.
When water is boiling reduce to simmer, add the brisket & pickling spice packet (I actually add an additional T of spices). Add 1 bay leaf.

Cook very slowly, covered, for about 3 1/2 hours.
Now Take a whole cabbage core it and cut it into wedges add to the pot. Cook for another 3/4 hour and then add well scrubbed baby red potatoes.
When potatoes are done, place meat on a serving platter, cut slices against the grain and serve with the cabbage & potatoes.
A spicy brown or German mustard will compliment the meat well.
Bread or yeast rolls will complete the meal.

Classic Corned Beef Dinner

Ingredients

4 lb Corned beef brisket
12 oz Bottle of beer
1 sm Onion, peeled
1 Bay leaf
1/2 ts Whole cloves
4 Black peppercorns
2 Stalks celery with leaves
8 Potatoes, peeled and halved
8 lg Carrots, peeled and halved
1 md Head green cabbage,
Quartered

Instructions

1. Place the brisket in a deep kettle and add cold water to just cover.
2. Add the beer, onion, bay leaf, cloves, peppercorns and celery. Cover and bring to a boil. Immediately reduce the head and let simmer about 4 hours (about 3/4 to 1 hour per pound of meat) until tender.
3. About 30 minutes before the meat is done, remove and discard the onion and celery. Skim the excess fat from the liquid. Add the potatoes and carrots; simmer 15 minutes.
4. Add the cabbage quarters and simmer an additional 15 minutes, or until the vegetables are done to the desired tenderness.
Note: Additional water can replace the beer in this recipe.

Toss it in a crockpot with all the enclosed seasonings, plus carrots, onions, garlic cloves, red potatoes, and cabbage. Fill about halfway with water and cook on low setting for 8 hours or high for 4 or 5.

A little yellow mustard is the perfect condiment. Serve with fresh bread to soak up the juice.

I like mine cooked in a slow cooker. For the liquid I use a large can of chicken stock, one bottle of good beer or ale, & (my secret ingredient) one jar of pickling spice. Cook 2 or 3 hrs, add red potatoes the last 1/2 hr. Remove corned beef & potatoes then boil cabbage in liquid until just tender. Slice corned beef on the cross grain, serve w/cabbage & potatoes. I also put regular mustard & horse radish on the side.

Corned Beef

1-4 Pound or so Corned Beef Brisket
2-Tsp Minced Onions
1-Tsp Garlic Salt
2-Tsp Ground Cloves
4-Bay Leaves

Topping

2-Tbls Mustard
2-Tbls Brown Sugar
½-Tsp Ground Cloves

Place Brisket in pot and cover with water. If the brisket came with a seasoning packet add it along with the minced onions, garlic salt, ground cloves and bay leaves. Bring to slow boil and reduce to simmer for three ½ to 4 hours.

Remove from pot and place in shallow pan. Mix topping ingredients together and spread evenly on top of meat. Put in 350-degree oven for 20 minutes. Slice crossways into ¼” slices.

If you want cabbage leave the pot on the heat when you remove brisket and cut a half head of cabbage into about six wedges. Put in pot and simmer for 20 minutes while the brisket is in the oven. Discard Bay Leaves.

i always either boil it or use a crockpot. I also always use the spice packet that came with it, unless I am planning on make corned beef hash with it, then I don't use the spices. I usually add cabbage and red potatoes (either halfed or quartered depending on the size.) One of the best dishes ever IMO.

Yes, it is a different pink than raw meat. And yes it is suppoed to be like that. The fork method is the best way to tell if corned beef is done.

Crock pot is the easy way and it comes out tender. Add sliced cabbage and yum!

Definetely in the crock pot. Comes out perfect all of the time. Cook it frozen on high or thawed on low.
