On travel to NY, NY I used to get the best ribs ever at Rusty's Place. Haven't ever found his secret or recipes and I think all his places are closed. Any help?

OVEN-ROASTED RIBS
6 pounds country-style pork ribs
1/2 teaspoon liquid smoke
1/4 cup Dijon-style mustard
2 tablespoons packed brown sugar
2 tablespoons paprika
1 tablespoon garlic powder
1 1/2 teaspoons ground black pepper
1/2 teaspoon salt

Place ribs in a shallow roasting pan lined with heavy-duty aluminum foil. In a small bowl, combine liquid smoke and mustard. Brush sides all sides of meat with mustard mixture. Combine remaining ingredients in a small bowl. Rub into ribs, coating well. Roast at 300 degrees for 2 1/2 to 3 hours, or until fork-tender. Cover with foil the last 30-45 minutes of roasting if ribs are becoming dry. Transfer ribs to serving platter. Let stand for 10 minutes before serving. Makes 8 servings.
