This is how I fix baked apples.

Core one apple per serving and cut a thin strip of peel around the circumference to prevent apple from bursting during cooking. Fill the core with either some red hots (cinnamon candies) or two teaspoons of margarine mixed with a little cinnamon and sugar.

Bake at 350 degrees until the apple is soft and brown. (Time depends on the type and how many apples you're fixing -- anywhere from 20 minutes on up.) Serve with whipped cream, ice cream, or plain heavy cream.

Maple Baked Apples
Serving Size : 4

4 medium cooking apples, cored
1/4 cup raisins or dried cranberries
2 tablespoons chopped walnuts
3 tablespoons maple syrup
1/2 cup water

Cut off a strip of peel near the top of each apple. Arrange apples in a 2-quart square baking dish. Fill apples with raisins or cranberries and walnuts.

Brush apples with syrup. Add the water to the baking dish. Bake in a 350 degree F oven for 40 to 45 minutes or until apples are tender, basting occasionally with the cooking liquid. Serve warm.

Ice Cream, But let's take it one step farther.

Baked Apple French Toast Casserole

Ingredients:

3 large green apples
1 stick (1/2 cup) butter
1/2 cup brown sugar
12 ounces cream cheese
12 slices firm bread, any flavor
8 eggs
1 quart milk
2 tablespoons vanilla
cinnamon to taste

Preparation:

Set rack in lower third of oven and preheat to 350 degrees F. Butter a 13 x 9-inch baking pan. Core and cut the apples into thin wedges, leaving the skin on.

In a skillet, melt the butter with brown sugar and 1 tablespoon water. Add the apples and cook stirring for two to three minutes. Transfer to the baking dish and let cool.

Cut the cream cheese into cubes and arrange evenly over the apples. Cut the slices of bread in half diagonally and layer over the apples to cover the whole dish.

In a large mixing bowl, beat together eggs, milk and vanilla. Pour the egg mixture over the bread, taking care to dampen all of the bread. Sprinkle with cinnamon. Bake for 40 to 50 minutes, until golden and puffed. Let cool 10 minutes before serving.

I have two great recipes that I have made this year:

Baked Apples

Ingredients:

8 large baking apples
8 ounces softened cream cheese
1 egg
1/2 cup brown sugar
1 teaspoon vanilla
1/4 cup raisins
1/4 cup chopped walnuts
cinnamon to taste
nutmeg to taste

Preheat the oven to 350 degrees. Remove the core from the apples. Remove the top third of skin. Remove some pulp to leave a shell approximately 3/4 inch thick. Combine egg, sugar, cream cheese, and vanilla. Beat until smooth. Add raisins and nuts. Fill each apple with cheese filling. The filling should crown the apple cavity. Place each apple into a greased ramekin. Place ramekins onto a baking pan. Fill baking pan with water to reach halfway up the sides of ramekin. Sprinkle each apple top with nutmeg and cinnamon. Bake 45 to 50 minutes or until apples are consistently soft.

Serving Size : 4

Amount Measure Ingredient -- Preparation Method

3 tbsp brown sugar
1/4 c hot water
4 lg rome beauty apples -- cored
1 tbsp lemon juice
12 caramels
1/2 c whipping cream

Combine brown sugar and water in an 8-in. square baking dish. Peel the
top half of each apple; brush with lemon juice. Place in the baking
dish. Fill each with three caramels. Bake at 350 for 60-65 minutes or
until apples are tender, basting every 20 minutes. Carefully lift
apples, allowing any caramel in centers to drip into pan, and place in
individual dessert dishes. Pour sauce into a small saucepan; add
cream. Cook and stir over medium-low heat until sauce is smooth and
thick. Spoon over apples; serve immediately.

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Place apples in a 9x13 inch baking dish.
In a small saucepan over medium heat, combine butter, maple syrup, cinnamon, ginger, lemon juice and vanilla. Bring to a boil, and drizzle equally over apples.
Cover with foil, and bake in preheated oven for 20 minutes. Remove cover, and continue to bake for 10 minutes, or until apples are tender. Serve warm.
