I'm the same kind of person, I really don't like birthday cake either. I am however, crazy about cheesecake and I love pineapple. I discovered a recipe for a tropical cream cheese pie. I am sure you can find this recipe on the Philadelphia cream cheese web site. The recipe includes cream cheese, lemon jello, pineapple, toasted coconut, and a graham cracker crust( I use a ginger snap crust). It is absolutely delicious. Happy Birthday!!!

My husband is the same way. He doesn't like cakes and asks for pie for his birthday. I usually make blueberry pie. I would suggest asking for a pie you actually like. Are you an apple pie person? or a key lime pie? It all depends on you. By the way, the store bought pies are not bad. We usually just buy it. Don't forget the ice cream on the side.

I too prefer pie to cake. When my father was alive (gone 19 yrs) He would ask me if I wanted $50 or supper and apple pie? I would take the supper and pie. He was the best cook too. So I know what your saying. Happy Birthday to you.

4 pounds Granny Smith apples, peeled, quartered, and cored
1 lemon, zested
1 orange, zested
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1/2 cup sugar, plus 1 teaspoon to sprinkle on top
1/4 cup all-purpose flour
1 teaspoon kosher salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground allspice
Perfect Pie Crust, recipe follows
1 egg beaten with 1 tablespoon water, for egg wash
Preheat the oven to 400 degrees F.
Cut each apple quarter in thirds crosswise and combine in a bowl with the zests, juices, 1/2 cup sugar, flour, salt, cinnamon, nutmeg, and allspice.
Roll out half the pie dough and drape it over a 9- or 10-inch pie pan to extend about 1/2-inch over the rim. Don't stretch the dough; if it's too small, just put it back on the board and re-roll it.
Fill the pie with the apple mixture. Brush the edge of the bottom pie crust with the egg wash so the top crust will adhere. Top with the second crust and trim the edges to about 1-inch over the rim. Tuck the edge of the top crust under the edge of the bottom crust and crimp the 2 together with your fingers or a fork. Brush the entire top crust with the egg wash, sprinkle with 1 teaspoon sugar, and cut 4 or 5 slits.
Place the pie on a sheet pan and bake for 1 to 1 1/4 hours, or until the crust is browned and the juices begin to bubble out. Serve warm.
Perfect Pie Crust:
12 tablespoons (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon sugar
1/3 cup very cold vegetable shortening
6 to 8 tablespoons (about 1/2 cup) ice water
Dice the butter and return it to the refrigerator while you prepare the flour mixture. Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out on a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
Cut the dough in half. Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Repeat with the top crust.
Yield: 2 (10-inch) crusts

Strawberry Rhubarb Pie
INGREDIENTS:
Pastry for a 2-crust 9-inch pie
1-1/4 cups granulated sugar
3 tablespoon quick cooking tapioca
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
Dash ground cinnamon
3 cups 1/2 inch pieces fresh rhubarb
1 cup fresh strawberries, sliced
1 teaspoon grated orange rind (optional)
1 tablespoon butter
PREPARATION:
In a large bowl mix together the sugar, tapioca, salt, nutmeg, and cinnamon. Add the rhubarb, strawberries, and orange rind and stir until the mixture coats the spoon. Let the mixture stand for 15 minutes.
Recipe Pumpkin Pie
Line a 9-inch pie plate with the pastry; spoon in the strawberry rhubarb mixture. Dot the top of the strawberry rhubarb mixture with the butter. Cover the pie with rolled out pastry; crimp edges. Bake in a preheated 400° oven for 35 to 40 minutes, or until crust is browned.
Serve pie warm with with whipped cream or vanilla ice cream.

Chocolate Coconut Pie
Amount Ingredient
1 1/2 cups all purpose flour
1/2 teaspoon salt
1/2 cup shortening
4 to 5 tablespoons ice water
Filling:
3 ounces unsweetened chocolate
1/4 cup butter or margarine
2 cups granulated sugar
1/4 cup all purpose flour
1 1/2 cups milk
3 eggs, beaten
1 teaspoon vanilla extract
1 1/4 cups flaked coconut
3/4 cup chopped pecans
Mint leaves, for garnish, optional
Preparation Instructions:
1. Combine flour, salt and shortening with pastry blender until mixture resembles coarse crumbs.
2. Stir in water with a fork, a little at a time, to form a ball.
3. On lightly floured surface, roll pastry to 12 inch diameter. Trim to make edges even.
4. Fit dough into 9 inch pie plate. Flute edges. Prick with fork.
5. Prebake crust at 425 degrees for 5 minutes.
6. In medium saucepan, heat chocolate and butter over low heat. Stir in sugar and flour until blended. Remove from heat.
7. Stir in milk, eggs and vanilla until blended. Stir in 1 cup coconut and pecans.
8. Pour mixture into pie shell.
9. Bake at 350 degrees for 45 to 55 minutes or until knife inserted 2 inches from outer edge comes out clean.
10. Toast remaining coconut in a skillet over medium heat. sprinkle over top. Cool. Garnish and serve.

Banana Split Ice Cream Pie
1 1/4 cups chocolate wafer crumbs (about 25 cookies; such as Nabisco's Famous Chocolate Wafers)
2 tablespoons butter -- melted
3/4 cup chocolate sundae syrup -- divided
4 cups sliced banana (about 5 bananas)
1 (1.75-quart) container vanilla ice cream -- softened
1 (18-ounce) jar strawberry sundae topping
1 cup coarsely chopped pineapple
5 tablespoons chopped dry-roasted peanuts
16 maraschino cherries with stems (optional)
Combine crumbs and butter, stirring with a fork until moist. Press crumb mixture into bottom and 1/2 inch up sides of a 10-inch springform pan. Spread 1/2 cup chocolate syrup evenly over crust; top with banana. Spread the ice cream evenly over banana. Cover and freeze 3 hours or until firm.
Spread the strawberry sundae topping evenly over ice cream. Cover and freeze 1 hour. Let stand at room temperature 5 minutes. Cut into 16 wedges. Drizzle each serving with about 3/4 teaspoon chocolate sundae syrup, and top each with 1 tablespoon chopped pineapple, about 1 teaspoon chopped peanuts, and 1 maraschino cherry, if desired.
