If you are wanting steak sauce this recipe I have from Marlboro recipe book I keep it made all the time and never have to buy steak sauce.Everyone here loves it even the most devoted store bought sauce people.
1 cup strong black coffee
1 cup Worcestershire sauce
1 cup catsup
1/2 cup cider vinegar
3 Tbs. chili powder
2 Tsp. salt
2 cups chopped onion
1/4 cup hot chili peppers minced {Serrano,jalapeno,etc}
6 garlic cloves minced
Combine all ingredients in a large saucepan;simmer 25 minutes.Puree in a blender. Keep in fridge. I have had some for months and it is always good.

Roasted Garlic & Bourbon Marinated New York Strip with Roasted Onion Sauce
Machine Shed Cooking Class recipe

INGREDIENTS:
4 (12-14 oz) New York Strip Steaks

MARINADE:
3 T. olive oil
2 T. dijon mustard
1⁄4 c. bourbon whiskey
1/3 c. soy sauce
2 T. red wine vinegar
1 T A-1 steak sauce
1⁄4 C. light brown sugar
2 T. minced red onion
1 T. minced roasted garlic
2 tsp. fresh ground black pepper
ROASTED ONION SAUCE:
1 medium sweet onion, cut into 8 wedges
1 tsp. Olive oil
2/3 c. beef broth
1 tsp soy sauce
4 tsp cracked black pepper

PROCEDURE:
Combine all ingredients for marinade.
Place steaks into marinade and refrigerate at least one hour, or overnight if possible.

For the onion sauce,
Coat the onion wedges with the olive oil and sprinkle with salt and the black pepper.
Roast on a baking sheet in a 375º oven for 25 minutes or until soft and translucent
In a blender or food processor: blend the onions with the soy sauce and beef broth.
Remove the steaks from the marinade and pat dry.
Grill to desired doneness and top with the warm onion sauce.

You can do a side dish and sauce @ the same time w/ this one:

In large skillet, heat olive oil & 2 tbsp. butter on medium. Add 2 cloves chopped garlic & 1 medium chopped onion. Stir and cook for about 7 minutes. Add 1 package of sliced white or baby bella mushrooms. Stir once to make sure they're being heated, then LEAVE THEM ALONE for about 6 minutes, so they'll start to caramelize.

Stir, then raise heat to Medium High. Add 1/2 tsp. salt, a few good twists of your pepper grinder, 3 tablespoons of worcestershire sauce and 2/3 C of good, red wine (whatever u like to drink) to mushrooms. Stir and allow alcohol to cook off and flavors to concentrate, about 3 minutes. It should be ready and fabulous then. For an extra shot of decadence, add in another 1 tablespoon of butter to finish, and maybe a handful of finely chopped fresh parsley. This can either be poured over or served alongside your steak.
