It seasons the dishes and brings out the flavor. If you overdo the seasonings/spices, it overpowers the dish.

Salt and pepper are not in every single dish made by a "cook" or a chef. They are probably the two most commonly used spices, however, because they are a mild form of seasoning that enhances flavor of a very wide variety of foods. They typically do not have any distinct taste that is could be unpleasant or strong to a lot of people(when used in moderation), unlike garlic or mustard seed. So pretty much, they taste good and can be used on a lot of food! :)

They don't. But salt acts as a flavour enhancement and a preservative, so a little of it will aid in bringing out the natural flavours of the dish as well as helping it retain it's colour and texture. Pepper enhances flavour as well. Too much of either will overwhelm the dish rather than enhance it, though.

The salt brings out the flavor, especialy kosher salt. Pepper just spices it up a bit. I love pepper!!!! Fresh ground and its good on everything.
