Your cookies will still be good, but not the same, without vanilla flavoring. There are plenty of alcohol-free vanilla options, including vanilla powders, vanilla sugar, and alcohol-free vanilla extract. Some grocery stores do carry alcohol-free vanilla flavor--it will say "alcohol free" on the label. If you can't find it at a regular grocery, look in a health food store or at a shop that specializes in cake making and decorating, or see the links below.

Not having vanilla in your chocolate chip cookies will make a difference. In addition to being a very specific flavor, vanilla actually enhances sweetness and brings out certain qualities of the chocolate flavor.
Many vanilla flavorings that are alcohol free are actually vanillin - which is one of the flavor esters of vanilla but is not really vanilla - it tends to be a bit bitter. You can find vanilla bean paste in some areas which contains no alcohol (they sell it at Trader Joe's) or you could take a vanilla bean and bury it in a two pound container of sugar for at least a week. The sugar will actually take on the vanilla flavor and you can use it in recipes that call for vanilla.
Incidentally, the alcohol in vanilla flavoring will completely cook off - there is no danger of actually consuming any alcohol in a product that is cooked for any length of time.

It depends on how much of the vanilla is called for. If it is only about 1 tsp then it was meant to be as a flavour enhancer. If it calls for 1/4 cup then it will make a difference. Hope it helps!

Yes, they will. For non-alcoholic alternatives:
- use artificial non-alcoholic vanilla flavouring;
- to replace a teaspoon of vanilla flavouring: buy a vanilla bean, cut it in half, scrape the marrow from it and use that with about a teaspoon hot water.
The second option gives much better results but is more expensive and takes more effort.

Yes, it will make a slight difference. You can omit it, but it does add a little extra something to the dough.
I'm not sure, but I think they make a vanilla without alcohol. Might want to check a health food store or organic food store, if you have one in your area.

Honestly, it makes a really tiny difference that most people (like me) really can't tell. I've made cake w/ and w/o vanilla. It's both good.

You can't just leave it out because it adds moisture as well as flavor. A teaspoon of orange juice would work.
