I make jerky and sell different flavors. Cinnamon, Crushed Red Pepper, Habenaro, Pineapple, Sausage, Teriaki, and a Garden Blend with dill pickles and tomatoes. I think cocoa would be a challenging flavor for jerky. What spice(s) do you think would compliment cocoa in a jerky?

I love jerky, but I was having a hard time trying to imagine Cinnamon jerky. . .let alone cocoa! :-)

If you're going to try it, why not use the cocoa in a mole-type marinade? You could use chicken broth with the cocoa, ancho or chipolte peppers, onion, garlic, some toasted, crushed pumpkin or sesame seeds (or both), and cumin.

I think that would be especially good with turkey or deer jerky.

I don't know friend, last year was the first time I tried jerky. I bought it for the hurricane season, you know, some kind of meat that would keep without refrigerating it (that is until after it's opened). Once I open the package I just can't put it down till it's finished because it's so good. Seems salty to me but I thought the beef jerky was good anyway. Seemed a little pricey also on the net and in the grocery store, but I acknowledge maybe it takes some preparation. I tried to sell the MLM version of jerky. Honestly, I don't think I could take cocoa jerky.

Having a hard time picturing cocoa jerky, but...

...how about something like orange citrus? I'm trying to picture a flavor that would also compliment the jerky.

Or, you could always fall back on cinnamon.

My Fav is Deer Jerky In Nevada Deer Season is already done over with. Deer & Elk Are the BEST!

Try a honey Jerky..
Or Garlic...
Cocoa Jerky , would be difficult to master..
Maybe, using coconut .

I don't think I would try cocoa. Maybe turkey jerky with sage and mustard.

maybe cocoa and curry.
Definitely do something with curry - it's my new favorite spice.
You can also try a cocoa and Bourbon flavor.
My mouth is watering. Deer season is 2 weeks away and I cannot wait for venison.

i SO agree with Eeyore. deer and elk jerky are the BEST. cant picture cocoa tho....
