Autumn is usually a dry time of year, so natural drying is the absolute best. Take several stalks of oregano, tie with a rubber band or cotton string, and hang from a hanger. Place in a dry room that gets good air circulation. It should be dry in three or four days. Don't let it hang too long -- it will get dusty! Strip the stalks into jars, or just put the whole "bouquet" into a tall canning jar, and strip it as you need it. Crumbling oregano will release essential oils, and it won't be as good over time.

Be sure to replace every year. Oregano doesn't last long.

You might think about planting a pot of oregano to bring inside, too. Fresh is best.

such as your back patio or garage entrance,
when the leaves are crisp crush them with the
palm of your hands and store them in a glass
container for longer freshness.
