Wow, your meals and snacks sound great, healthy and appealing! My 3 year old usually eats either cereal or oatmeal for breakfast, that's what she always wants and I'm glad cereal is healthy for her. Sometimes she'll have a couple waffles and on Sunday's we usually actually make a big breakfast, bacon, eggs, biscuits. For snacks she'll have fruit cups, graham crackers, goldfish crackers, things along those lines. Lunch is usually something easy like chicken nuggets and a veggie or mac n cheese, or a corny dog, something like that. Dinner is usually better, a pasta or rice side dish, a veggie, and a main meat, either chicken or beef usually. She loves to drink orange juice, milk, and even water, but my in-laws and parents give her coke when she's over there and of course she LOVES it, but we don't keep much soda in our house so I figure coke on those visits to the grandparents is ok. We try to eat pretty healthy, but we do splurge sometimes too, like pizza or hamburgers. Anyway, sounds like you are doing a great job! (Oh, I have an 8 month old too, but she's just now eating baby food.) =)

i take the things i know my kids will eat and change them around a little. they like tuna casserole, so i can turn that into tuna melts. they like spaghetti, you can add tons of veggies to spaghetti sauce (pureed carrots, eggplant chunks) and they never notice. chicken is easy--breaded chicken fingers, chicken alfredo, chicken sandwiches...find the main ingredients they like and then do a recipe search!

my kids eat what i fix.. if they don't like it, I keep hotdogs and lunch meat in the fridge. I don't make seperate meals for everyone. I have 6 kids, I can't afford to let them be picky!!
