BBQ Chicken Pizza:

We love the contrast of flavors provided by sweet tomato chutney, savory chicken, and sharp cheddar cheese.

1 (10-ounce) Italian cheese-flavored thin pizza crust (such as Boboli)
3/4 cup tomato chutney
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
2/3 cup diced plum tomato
3/4 cup (3 ounces) shredded extra-sharp white cheddar cheese
1/3 cup chopped green onions

Preheat oven to 450°.

Place crust on a baking sheet. Bake at 450° for 3 minutes. Remove from oven; spread chutney over crust, leaving a 1/2-inch border.

Top chutney with chicken. Sprinkle diced tomato, cheese, and green onions evenly over chicken. Bake at 450° for 9 minutes or until cheese melts. Cut pizza into 6 wedges.

Note: If you can't find tomato chutney, make your own. Combine 2 cups diced plum tomato, 3 tablespoons brown sugar, 3 tablespoons cider vinegar, 1/8 teaspoon Jamaicañ jerk seasoning, and 1 minced garlic clove in a small saucepan; bring to a boil. Reduce heat to medium; cook 20 minutes or untril thickened.

Yield: 6 servings (serving size: 1 wedge)

White Pizza With Chicken And Basil

CRUST
1 package active baker's yeast
1 cup warm water
2 tablespoons cooking oil
1/4 teaspoon salt
2 3/4 to 3-1/4 cup flour
TOPPINGS
3 tablespoons olive oil
2 whole chicken breast, no skin, no bone, R-T-C
1 small onion -- chopped
1 clove garlic -- chopped
dash Cayenne pepper
1 tablespoon fresh basil -- chopped
1 cup fresh mushrooms -- sliced
1/2 to 1 cup cheddar cheese -- shredded
1/2 to 1 cup swiss cheese -- shredded

Dissolve yeast in warm water; add oil and salt, then gradually stir in flo
ur. Knead on floured surface until smooth and elastic. Let dough rest about 1
0 minutes, then pat into a large baking sheet. (Crust should be on the thin si
de, not deep-dish style.)
Heat 1 tablespoon of olive oile in skillet. Slice chicken breasts thin an
d cook along with onion, garlic and cayenne until chicken is cooked through. A
dd mushrooms and basil and cook another minute or two.
Brush entire empty crust generously with olive oil. (This is key not only
to the taste but also to making the crust crispy.) Sprinkle with shredded che
eses and add rest of toppings from the skillet. Bake at 375 degrees until crus
t is golden (10-12 minutes)

Anyone can add fresh cheese and veggies on a pizza, but I think the dough and sauce make the flavor. We buy fresh dough from the grocery store (Publix) bakery. It's awsome! You can make pizza sauce pretty easy, but we just buy Ragu pizza sauce in the jar and add a little sugar. We have homemade pizza every friday night, and it tastes better then anywhere I have ever ordered out. Also, we use provolone and mozzerela cheese on ours.

my absolute favorite pizza is white made with Alfredo sauce, blk olives, chicken and broccoli. Or Alfredo with chix and artichoke hearts. Lots of garlic also

i buy my dough from pizza place that i like. instead of sauce i use olive oil and put salt and pepper on dough then what ever chesse striks my fancy i use alof to it. i like sauage and apples right now.

i haven't been able to make a great pizza, so i go to a local Mom&Pop shop any they are the best. i like thin crust.
