Does anyone know how they make this sweet yams dish, with marshmallows and cinnamon crumbs like the Boston Market style?

I learned a wonderful sweet potato casserole from my mom that is the bomb!! Take 4 - 6 sweet potatoes or yams & peel, then boil until fork tender. Mix with medium speed w/mixer & add 1 egg, nutmeg, cinnamon, sugar, brown sugar & butter. Cream all together & pour into casserole dish. In medium saucepan, melt together 1 stick butter 1/2 cup brown sugar & 1 cup frosted flakes. Spoon over dish & bake @ 350 til brown & bubbly ( 35 - 45 minutes ) Goes great with ham!!!

I take giant yams (or sweet potatoes) and bake them. When they are done and cooled, I halve them and scoop out the insides leaving a good amount along the lining of the potato skin. Then in a bowl I add pineapple chunks, melted butter, Cinnamon, salt, pepper, orange juice concentrate to the potato and mix very good with mixer. I then add miniature marshmallows and walnuts and fill the skins back up. A little before the dinner I pop them in the oven to reheat. They are soooo good.

You'll find the version with the marshmallows at the bottom...

"Candied Yams" - 6 servings

4 yams or sweet potatoes; unpeeled
1 tsp. salt
1/2 cup butter or margarine
1/2 cup packed brown sugar
1 tbsp. grated orange peel
1/4 cup orange juice or water
1/8 tsp. ground cinnamon
Generous dash pepper
1/2 cup coarsely chopped walnuts (optional)

1) In 4-quart saucepan, place yams and salt; add water to cover. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 30-40 minutes until yams are fork-tender. Drain; cool slightly. Peel and quarter yams.
2) In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper; heat to boiling. Add yams and nuts; heat until yams are glazed, spooning sauce over to coat.
SWEET POTATO CASSEROLE: Use ingredients as above, but omit walnuts. Prepare as above in step 1. Butter 2-quart casserole. In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole. Top with 2 cups miniature marshmallows. Bake at 375* - 15 minutes or until topping is golden.
