Scurvy is due to low levels of vitamin C, which is water-soluble and cannot be stored in the human body. It was a major plague of sailors in the 1800s---not unusual to lose 25% of your crew on long voyages---if you didn't have adequate supplies of onions or cabbages (or sauerkraut) and couldn't get resupplies of fresh fruits and veggies.

The scurvy problem finally got wiped out when it was found that lemon juice would prevent symptoms. In a cost-cutting move, the British Navy was using limes---thus, the slang "Limey" for an English sailor---but these have lower vitamin C levels than lemons.
