Five Minute Fudge

INGREDIENTS

2/3 cup Carnation® milk
1 2/3 cups sugar
1/2 teaspoon salt
1 1/2 cups mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1 teaspoon vanilla

Over medium heat bring to boil the milk, sugar, and salt; cook 5
minutes, stirring constantly. Remove from heat. Add in marshmallows, chocolate chips, and vanilla extract. Stir until marshmallows melt— this will take a minute or so. Pour into 8 –inch buttered square pan to set. For easy cutting into bite-size squares, dip your knife in hot water between slices. Optional* you may add nuts if you wish.

This is the fudge I make for EVERYTHING...everyone loves it but it's really sweet so I cut it small...I hope you like it as much as I do!


Peanut Butter Fudge
Recipe courtesy Alton Brown

1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon pure vanilla extract
1 pound confectioners’ sugar

Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and confectioners’ sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

I have the one that 'Carole' gave you, but here's another one...

"Butter Pecan Fudge" - 1 1/4 pounds

1/2 cup butter
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup heavy whipping cream
1/8 tsp. salt
1 tsp. vanilla extract
2 cups confectioners' sugar
1 cup pecan halves; toasted and coarsely chopped

In large heavy saucepan, combine the butter, sugars, cream and salt. Bring to a boil over medium heat, stirring occasionally. Boil for 5 minutes, stirring constantly. Remove from heat; stir in vanilla. Stir in confectioners' sugar until smooth. Fold in pecans.
Spread into a buttered 8" square dish. Cool to room temperature. Cut into 1" squares. Store in an airtight container in the refrigerator.

1 bag chocolate morsels.
1 can sweetened condensed milk.
Vanilla.
Chopped nuts (optional: walnuts, almonds, or cashews work great).

Put the chocolate and milk in a microwave safe bowl. Nuke until chocolate is melted enough to stir in with the milk. Add about a capful of vanilla. Stir in nuts. Once mixed thoroughly, pour into a wax paper lined shallow square dish or pan. Place in the 'fridge or freezer until hardened. Pop out of pan and cut into bitesize sqaures.

Butterscotch-Peanut Fudge:

1 (11-ounce) package butterscotch morsels
1 (14-ounce) can sweetened condensed milk
1 1/2 cups miniature marshmallows
2/3 cup chunky peanut butter
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup chopped dry-roasted peanuts

Cook first 3 ingredients in a small heavy saucepan over medium heat, stirring constantly, 5 to 6 minutes or until smooth; remove from heat. Stir in chunky peanut butter, vanilla extract, and salt until blended; stir in chopped peanuts. Pour into a buttered 9-inch square pan. Chill until firm; cut into squares. Store fudge in refrigerator.

NOTE: For ease, microwave first 3 ingredients in a 2-quart microwave-safe bowl at HIGH 2 to 3 minutes or until melted, stirring twice.

Yield: Makes 2 1/2 pounds

1. head to the local taco bell restaurant.
2. order $15 dollars worth of anything.
3. wake up the next moring and empty underpants into pan.
4. enjoy!
