Assuming you are in the UK, each gas number indicates 25 degrees F higher than the previous number

Gas 2 = 300F
Gas 3 = 325F
Gas 4 = 350F
Gas 5 = 375F
Gas 6 = 400F
Gas 7 = 425F
Gas 8 = 450F

to convert to degrees Celsius (Centigrade), subtract 32 from the number of degrees F.

Then multiply by 5 and divide by 9 to get the number of degrees C

Librarian did good but I'd add that it wouldn't be a bad idea to pick up an oven thermometer to see where your oven is actually running temperature wise! From experience with several older ovens the calibration is usually way off (as much as 75 degrees F.)

that is the tempature that your oven will be cooking at....if the recipe says 350 then you put the number to 350 and leave it in for the time it says....

if it's not degrees Celcius then check your instruction book.
If it is really old then get a new cooker
