1/2 cup olive oil
4 cloves garlic minced
2 pounds beef round steaks well trimmed, cut in 1-inch pieces and well chilled
2 teaspoons salt
2 teaspoons black pepper
1/2 cup green onions very thinly sliced, including some green
1/2 cup onions finely chopped
2 teaspoons lemon peels grated
1 3-ounce jar capers well drained
3 tablespoons white wine vinegar
3/4 cup parsley chopped
Wheat crackers or cocktail rye bread

About 1 hour before serving:

In a small bowl, mix olive oil and garlic; set aside.

In a food processor bowl fitted with the metal blade, place one-third of the meat at a time; cover. Process for 5 to 7 seconds or until meat is finely chopped. Shape meat into a round on a 12-inch platter. Press top flat.

Sprinkle meat with salt and pepper. Layer with green onions, onion, lemon rind and capers. Sprinkle with vinegar and oil-garlic mixture. Top with parsley. Let stand at room temperature up to 30 minutes before serving but do not leave unrefrigerated for more than a total of 2 hours.

Serve with crackers or bread. Cover and refrigerate leftovers.

NEVER USE STORE BOUGHT GROUND BEEF AND ALWAYS THOUROUGHLY CLEAN YOUR PROCESSOR, this is where the food poisoning comes from not the fresh meat itself.

I am of German descent and here is how we made hamburger and meatloaf from the same recipe. To approximately 2 pounds of raw chopped beef, add three raw eggs, a chopped whole onion, a chopped stalk or two of celery, a cup of whole milk, several slices shredded white bread such as Wonder bread, or use unseasoned or seasoned bread crumbs, salt and pepper to taste. Mix together in a large bowl and form into either hamburger patties or meatloaf and cook.

Are you talking about a Tiger Meat Sandwich?

It's made with German bread, raw hambuger, raw onion, salt and pepper to taste. There are variations on that theme, but that's about it.

Oh yeah, I think my German grandfather used to throw on some homemade saurkraut; but his kids made it as described above.

Hope that helps.

BTW, the theory is that the raw onion can help prevent or minimize the various things that can happen to you if you eat raw hamburger. I wouldn't recommend it. One of those "things" is e. coli, which as far as I know is not deterred by raw onions.

Steak Tartare

1 Lb Minced or chopped fillet, sirloin or rump steak, all fat removed
2 lrg Raw egg yolks
2 tbl Worcester sauce
1 tbl Dijon mustard
1 tbl Finely chopped capers
1 tbl Red onion
1 tbl Finely chopped shallot
1 tbl Finely chopped anchovy
3 tbl Extra virgin olive oil
1/2 tbl Freshly squeezed lemon juice
2 tbl Finely chopped fresh leaf parsley
1/2 tsp Tabasco sauce
1 tbl Finely chopped gherkin
1/4 tsp Sea salt
1/2 tsp Ground black pepper

Mince or chop the beef just before you want to serve the dish to retain the colour of the beef.
Combine the ingredients without the beef ensuring the oil is well emulsified with the egg yolks and liquid ingredients. Some people like to fold in finely chopped hard boiled egg whites and yolks, but personally I don't think it adds anything to the dish. With the Worcester sauce, mustards and Tabasco, feel free to vary the amounts according to your palate.
Just before serving mix the meat with the combined ingredients. Adjust seasoning as necessary.
Serve with a large pile of very hot chips or the thinner frites, some mayo if you desire and a simply dressed leaf salad.

If I'm understanding your question correctly, you want to make your own hamburger - with raw meat, seasonings, etc.?

Take a look at these sites (I did a Google search):

I'm trying to find the same recipe. I know what my in-laws called it and it sounded like "Kahaktas" but that's not how it's spelled. It was some kind of raw ground up steak mixed with spices and they ate it on rye bread. If anyone knows what this is called, I would LOVE to find out! Thanks!
