Whoopie pies

The frosting of a whoopie pie can vary a bit, but most recipes use some combination of marshmallow fluff, shortening beaten with sugar, and buttercream. The marshmallow fluff gives the frosting a gooey texture. The shortening provides durability and stability. The buttercream tastes really nice. I've only seen one bakery use whipped cream. The cake itself is always round and perhaps a bit denser than normal cakes since the batter is dropped into baking sheets like drop cookies. Though chocolate flavored cake surrounding white vanilla frosting is standard, I've seen many variations: gingerbread, pumpkin, oatmeal, or molasses cakes, and maple syrup, chocolate, cream cheese, or peanut butter centers.

For the cake:
6 tablespoons softened butter
1 cup white sugar
1 egg
2 cups all-purpose flour
5 tablespoons unsweetened cocoa powder
1 teaspoon salt
1 1/2 teaspoons baking soda
1 cup milk
1 teaspoon vanilla extract

For the filling:
3/4 cup softened butter
3/4 cup confectioner's sugar
teaspoon vanilla extract
1 cup marshmallow fluff (about half a jar)
1 tablespoon milk (optional)

Grease two baking sheets. Preheat the oven to 375 degrees. Cream together 1 cup of sugar with 6 tablespoons of butter and an egg. In a separate bowl, sift together 2 cups flour, 5 tablespoons cocoa, 1 1/2 teaspoons baking soda, and 1 teaspoon of salt. Mix 1 teaspoon of vanilla with 1 cup of milk in a separate container. Alternate adding this milk mixture and the flour mixture to the butter mixture. Mix well after each addition. Drop by tablespoonfuls onto the cookie sheets to make an even number of cookies. Bake for 10 minutes or until tops spring back when lightly touched. Remove from cookie sheets and cool on wire racks.

For the filling, cream together 3/4 cup butter and 3/4 cup confectioner's sugar in bowl until fluffy. Blend in 1 teaspoon vanilla, 1 cup marshmallow fluff. If it looks too thick, add in 1 tablespoon of milk. Spread on half the cooled cookies and top with remaining cookies. Wrap in plastic wrap and store in the refrigerator if they last that long.

You can add different flavorings to your filling after it is made from strawberry, butterscotch, and mint. Practically anything you would like. Peanut butter and cream cheese is good!

Whoopie Pies Recipe
Serves 6

Ingredients:
1/2 cup margarine
1 cup sugar
1 egg
1 cup water
2 cups flour
3/4 tsp baking soda
1/2 cup cocoa
1/2 tsp salt
Cream filling:
1 stick margarine
1 cup confectioner's sugar
1/2 jar marshmallow cream

Instructions:
1. Preheat oven to 450 F.
2. Mix all ingredients together until well blended.
3. Drop by teaspoonfull on an ungreased cookie sheet.
4. Bake for 7 to 8 minutes; remove from oven and place on wire rack to cool.
5. Prepare the cream filling by blending together all the ingredients.
6. Coat one devil dog with the cream and top with another devil dog.

Pumpkin Whoopie Pies

Original recipe yield: 24 servings

INGREDIENTS
1 cup shortening
2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 1/2 cups canned cooked pumpkin
FILLING:
1/4 cup all-purpose flour
1 dash Dash salt
3/4 cup milk
1 cup shortening
2 cups confectioners' sugar
2 teaspoons vanilla extract

DIRECTIONS
In a mixing bowl, cream shortening and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt, cinnamon and ginger; add to creamed mixture alternately with pumpkin. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets; flatten slightly with the back of a spoon. Bake at 400 degrees F for 10-11 minutes. Remove to wire racks to cool. For filling, combine the flour and salt in a saucepan. Gradually whisk in milk until smooth; cook and stir over medium heat for 5-7 minutes or until thickened. Cover and refrigerate until completely cooled. In a mixing bowl, cream shortening, confectioners' sugar and vanilla.
Add chilled milk mixture; beat for 7 minutes or until fluffy. Spread on the bottom of half of the cookies; top with remaining cookies. Store in the refrigerator.

Here is a basic recipe for Mable:
2c sugar
1c shortening
2 eggs
2 c flour
2tsp vanilla
1 tsp salt
1c sour milk
2 tsp baking cocoa
1c hot water
1c baking soda
cream sugar, shortening and add eggs,sift flour,cocoa and salt and add to cream mixture-alternating with sour milk,add vanilla and disolve soda in hot water and mix well,drop by tsp onto coookie sheet and bake at 400 for 8 to 10 minutes.
