Here are some recipes that I have made recently:

Baked French Toast Recipe

Ready in: > 2 hrs
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 4

Ingredients:
1 loaf French Bread
3 eggs
3 tablespoons sugar
1 teaspoon vanilla extract
2 1/4 cups milk
1/2 cup flour
6 tablespoons brown sugar
1/2 teaspoon cinnamon
1/4 cup butter
1 cup fresh or frozen blueberries
1 cup sliced strawberries -- warmed

Directions:

Cut bread diagonally into 1-inch slices and place in a well-greased 9 x 13 inch baking dish. In a med. bowl, lightly beat eggs, sugar and vanilla. Stir in milk until well blended. Pour over bread, turning pieces to coat well. Cover and refrigerate overnight.

Preheat oven to 375F degrees. In small bowl, combine flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Turn bread over in baking dish. Scatter blueberries over bread. Sprinkle evenly with crumb mixture.

Bake about 40 minutes until golden brown. Cut into squares. Top with heated strawberries or serve them on the side.

Cherry Stuffed French Toast

1 French baguette
4 ounces cream cheese
8 ounces cherry pie fill (about 1/2 can)
4 large eggs
1/2 cup cream
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. vanilla extract Directions:
Preheat griddle to 350 degrees.
In a medium bowl mix 4 oz. of cream cheese with cherries (take cherries from can with a fork in order to avoid too much syrup). Blend until smooth. Mixture should be pink, cherries will be in pieces.
In a large bowl beat eggs. Add in cream, vanilla extract, cinnamon & nutmeg. Mix well.

With a serrated knife cut baguette diagonally into 1/2 inch slices. Cut each slice into a top and bottom without separating. Fill with a tablespoon of the cream cheese mixture and close. Soak stuffed bread pieces in egg mixture until slightly "squishy". Place on hot greased griddle and cook until golden brown. Serve with powdered sugar, maple syrup or fresh fruit.

Strawberry-stuffed French Toast
(All ingredients are per serving, multiply as necessary)

2 slices thick-cut cinnamon bread (most thick-sliced breads will work)
2 tbs whipped cream cheese
1/4 c + 2 tbs strawberry preserves
2 large strawberries, one thinly sliced
1 egg
splash of cream or half & half
dash of cinnamon
butter for cooking
sprinkle of powdered sugar

Spread cream cheese on one slice of bread, place sliced strawberry evenly over top, carefully spread 2 tbs strawberry preserves over cream cheese and strawberry. Top with second bread slice, forming sandwich.

Whisk egg, cream and cinnamon together in shallow dish/pan.

Preheat electric griddle to 275E (may also use frying pan).

While griddle is heating, soak French Toast sandwich in egg mixture, evenly coating all sides.

Add butter to heated griddle and toast sandwich on all sides. Cook until cream cheese is melted and sandwich is evenly browned. Turn up heat on griddle to 350E once cream cheese is melted to get crispy toast.

Warm 1/4 c strawberry preserves in microwave (or on stove top).
Serving suggestion: Place French Toast on plate and drizzle warmed preserves over top. Garnish with remaining strawberry. (Tip- slice strawberry on diagonal from crown to tip without separating and fan strawberry out.) Sprinkle with powdered sugar. Enjoy!

Alternates: Almost any type of preserves and fruit will work with this dish. In season we use blackberries and raspberries. You may substitute a dash of vanilla instead of the cinnamon for a sweeter flavor.

------------------AND A "BONUS" RECIPE FOR YOU...

Bananas Foster French Toast

Whisk together:
4 eggs
2 cups heavy cream
1/2 teaspoon vanilla

Mix:
1/4 cup brown sugar
1 tablespoon cinnamon

Other ingredients:
6 tablespoons butter
4 ripe bananas sliced lengthwise then in half
3 tablespoons confectioners sugar
8-10 slices challah or French bread 3/4 inch thick

Dip bread into egg/cream mixture and cook on a skillet or flat top grill @ 325. Turn once, should be golden brown on both sides. In a sauté pan, melt butter; add bananas, then brown sugar mixture. Stir sauce and turn bananas, some caramelization should occur.

Plate French toast, top with bananas and sauce.
Dust with confectioners sugar.
Serve with maple syrup.

BAKED FRENCH TOAST

1 baguette French or Cuban bread
6 lg. eggs
1 1/2 c. milk
1 c. Half and Half
1 tsp. vanilla extract
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 c. butter, softened
1/2 c. light brown sugar, firmly packed
1/2 c. chopped walnuts or slivered almonds
1 tsp. lite corn syrup
Maple syrup

Start the day before serving. Cut bread into 1-inch slices. Butter a 9-inch square baking pan or a larger rectangular pan. Arrange bread slices slightly overlapping to fill pan completely.
In a medium bowl, combine eggs, milk, cream, vanilla, cinnamon and nutmeg. Mix well and pour over bread slices. Cover and refrigerate overnight.

Preheat oven to 350 degrees. In a small bowl, combine butter, sugar, nuts and corn syrup. Mix well and spread evenly over bread. Bake 40 minutes or until puffed and golden.

Serve with maple syrup.

Cherry Cheese French Toast

Serves: 8
12 cups Day old Italian bread (cubed 1/2 inch squares)
8 oz Cream cheese (softened)
1 1/2 cup Sugar
1 teaspoon Almond Extract
1/2 cup Dried Cranberries (or cherries)
1/2 cup Chopped Pecans
2 cups Half and Half
1 teaspoon Cinnamon
4 Eggs
14 oz Sour cherries (drained and chopped)
1 cup Light corn syrup


Grease a 13 x 9 in baking pan; put 8 cups bread in pan. In mixing bowl beat cream cheese, 1/4 cup sugar, 1/2 tsp. almond extract until smooth. Add cranberries and pecans. Drop by spoonfuls over bread cubes. Mixture will be thick.
In mixing bowl beat eggs, 1/4 cup sugar, milk, and cinnamon and pour over bread. Bake uncovered at 350 for 35-40 min or until browned. Top with remaining bread cubes. Let stand 5 min before serving.
Cherry Sauce- Combine cherries, 1 cup sugar, and corn syrup in saucepan and bring to boil. Reduce heat and simmer for 15 minutes. Remove from heat and add 1/2 tsp. almond extract. Serve warm. (Sauce is thin). I cut 4x4" or 5x5" squares and pour a little cherry sauce over top to serve. Place the remaining sauce in a small serving bowl with ladle.

Croissant French Toast With Fresh Strawberry Syrup:

Prep: 15 min., Cook: 4 min. per batch

4 large day-old croissants
3/4 cup milk
2 large eggs
1 teaspoon vanilla extract
2 tablespoons butter
3 tablespoons powdered sugar
Sweetened Whipped Cream (optional)
Fresh Strawberry Syrup

Slice croissants in half lengthwise.

Whisk together milk, eggs, and vanilla. Pour into a shallow dish. Dip croissant halves into egg mixture, coating well.

Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add four croissant halves, and cook about 2 minutes on each side or until golden brown. Repeat procedure with remaining butter and croissant halves. Sprinkle with powdered sugar; top with Sweetened Whipped Cream, if desired, and Fresh Strawberry Syrup.

Yield: Makes 4 servings

The last recipe is what I was going to send you. It is wonderful, especially for Christmas morning! You can make the night before and you can also use dried cranberries or raisins instead.
