If it is crystalizing, heat it in the microwave I use the reheat bread or rolls selection. Works every time.

I think the process of crystalization has to do with humidity levels.

First, make sure you don't keep it in the fridge. Honey is one of nature's wonders that doesn't spoil in room temp.

The crystalization doesn't really change the taste of the honey, so don't be bothered by it. The more you heat and cool, the more it will crystalize. Just scope and heat what you need from the jar and spead it that way.

Use it more quickly, it is part of the aging process. So, to use it more quickly, buy smaller quantity next time. Place the opened honey bottle in a pan of hot water and the crystals will liquefy.

Warm it gently. But be careful, if you heat it too much it'll be even more crystalized than before once it cools back down!
