Great question, Dan. Pork has pretty much been on the breakfast menu in the western world, seems like forever. You can try making a hash with corned beef or dark turkey. All depends on the seasonings. If you're really into food prep maybe you can buy a sausage machine and make little breakfast sausages. You can put absolutely anything in a sausage. Again, it all works with the correct herbs and spices. Nothing wrong with a small steak for breakfast. A small lamb chop is excellent as well. Personally, I got away from the whole traditional breakfast years ago. Now it's steel cut oatmeal with yoghurt and fruit. Or often I just lay out a couple hardboiled eggs, dry whole wheat toast, fruit, and yoghurt. Tabasco sauce for the eggs. Then a cup or two of coffee. I like pork but not in the morning.

Nathan's Hebrew National makes beef products of things that normally have pork.

I've also had a terrific southwest omelette which was filled with ground beef-taco seasoned meat.

Meat is not the best thing but acceptable in small amounts. Many people eat steak and eggs. Sirloin tips are juicy and tender. If you must eat meat, try chicken. The top restaurants are serving it in thier skillets menu. Simply sauteed in the pan with any seasonings(breast or tenderloin) and great served with hollandais sauce. Or for a change, mushrooms are great, if you like them, and come in many varieties. Portabella is the meaty one.

My dad always liked Creamed Chipped Beef on toast.

2 tablespoons all-purpose flour
1 1/2 cups warm milk
1 (8 ounce) jar dried beef

DIRECTIONS
In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.

Fried kidneys are traditional English breakfast fayre. You might also like to try thin slices of fried black pudding. It tastes delicious and spicy, and is very hearty. Don't ask what's in it, just as you wouldn't ask what's in a Big Mac or a hot dog sausage! Also, fish goes really well for a traditional breakky, like smoked kippers, and kedgeree.
