An old fashioned from scratch recipe would be appreciated

Ingredients

1/2 cup whipping cream
1/2 cup light corn syrup
3 cups (18 ounces) semisweet chocolate chips
1-1/2 cups powdered sugar, sifted
1/2 cup chopped walnuts (optional)
1-1/2 teaspoons vanilla


Preparation

1) Line 8-inch square baking pan with foil, extending edges over sides of pan.

2) Bring cream and corn syrup to a boil in heavy 2-quart saucepan over medium heat. Boil 1 minute. Remove from heat. Stir in chocolate. Cook until chocolate is melted, stirring constantly. Stir in powdered sugar, walnuts and vanilla. Pour into prepared pan. Spread mixture into corners. Cover; refrigerate 2 hours or until firm.

3) Lift fudge out of pan using foil; remove foil. Place on cutting board; cut into 1-inch squares. Store in airtight container.

My Dad's Fudge

3 cups sugar
2/3 cup cocoa
1/8 teaspoon salt
1 1/2 cups milk
1/4 cup butter
1 teaspoon vanilla extract
3/4C chopped walnuts

Line 8 or 9 inch square pan with foil; butter foil.
In large heavy saucepan stir together first three ingredients; stir in milk, with a wooden spoon*.
Cook over medium heat, stirring constantly, until mixture comes to a full rolling boil.
Boil without stirring, to 234 degrees F on a candy thermometer (or until syrup, when dropped in very cold water forms a soft ball which flattens when removed from water). Bulb of candy thermometer should not rest on bottom of pan.
Remove from heat. Add butter, vanilla and walnuts.
DO NOT STIR! Cool at room temperature to 110 degrees F (lukewarm). Beat with wooden spoon until fudge thickens & loses some of its gloss.
Quickly spread into prepared pan; cool.
Cut into squares.
Store wrapped loosely in foil in the refrigerator
*it is very important not to use a wire whisk or the fudge will not set up. Also just stir gently, even though the cocoa will stay floating on top, it will mix in as the mixture heats up.

Fast 'N Fabulous Dark Chocolate Fudge

Ingredients

1/2 c light or dark corn syrup
1/3 c evaporated milk
3 c (18 oz) semisweet chocolate chips
3/4 c confectioner's sugar; sifted
1 c coarsely chopped walnuts

2 ts vanilla
Instructions
Spray 8-inch square pan with cooking spray. In a 2-quart saucepan combine corn syrup and evaporated milk; add chocolate. Stirring constantly, cook over low heat until smooth. Remove from heat. Add remaining ingredients. Beat with spoon until thick and glossy. Spread in pan. Chill 2 hours or until firm.
