You can keep cheese IN the refrigerator for a long pooed of time, when a white crust starts to form you can cut it off and still use the rest of the cheese with no problem. Do not do that process to often, the cheese will start to harden

It's been my experience that the white cheeses will stand up reasonably well. That is, the cheeses that have a smooth texture, including the swiss, emanthaler varieties.

The cheddars, the blue cheeses and the others, made more like cottage cheese and pressed to make a block seem to bleed out the water after it thaws, tastes terrible and are not good for cooking.

The freezer is fine. Food products don't go bad in the freezer, they just lose taste and quality. Its best to shred your cheap grocery store cheese and then freeze it for soups or pasta or something like that and keep the good cheese in the fridge.

Generally, avoid putting any milk based products in the freezer unless you want the quality to severly suffer and you want the increased chance of catching a bad case of food poisoning.

Sure! I buy blocks of hard cheeses, shred them, put them in ziplocks and toss them in the freezer. Cheese on demand!

yeah, i do it all the time. its just fine, and it lasts longer so you don't have to eat a ton of cheese before it rots.haha
