A brown sugar sauce.

INGREDIENTS
1/4 cup butter
3 tablespoons all-purpose flour
2/3 cup packed brown sugar
1 cup cold milk
1/4 cup brandy
1/4 teaspoon vanilla extract
DIRECTIONS
Melt butter in a small saucepan set over medium heat. In a medium-size bowl, stir flour with sugar. Then whisk into melted butter until mixture is moistened. Stir in milk until smooth. Cook, whisking frequently, until thickened and smooth, about 5 minutes. Stir in brandy and vanilla. Remove from heat.
Serve right away over Apple Coffee Cake with Brown Sugar Sauce. Or cover and refrigerate for a week or more. Reheat just before serving.

It would depend on the circumstances and what other items were part of the meal! With Turkey, I would probably go with brown sugar and butter sauce, with a ham I would lean more toward a raisin sauce of some kind, you can always incorporate bourbon, marshmallows, just plain, roasted is fantastic because it uses it's own carmelization, cinnamon and brown sugar works well, and so forth. Really need all the facts to sum up an answer!

Fresh Yams in Orange Sauce
4 lb Yams or sweet potatoes
2 tbl Cornstarch
2 cup Orange juice
1/2 cup Pitted dates
1 1/2 tsp Grated orange peel

Cook yams until tender Drain and slice. Place slices in casserole dish Blenderize orange juice, dates and cornstarch until smooth Cook in small saucepan over medium heat until mixture thickens, stirring constantly.
Remove from heat. Stir in orange peel Pour sauce over yams in casserole dish. Cover with foil Bake at 400 for 45 minutes Remove foil and continue baking basting frequently with sauce, about 15 more minutes Garnish with orange slices and sprigs of mint. NOTE this can be made a day ahead of time and kept refrigerated until ready to bake.

Try cooking them until fork tender in boiling water. Drain them and then mash them or use an electric. beater until they are smooth. Then add half to three quarter stick of margarine or butter and whip that in. Next you add Dark Brown sugar to taste. It is an easy dish and you can make it a head and reheat in oven or microwave before serving. Some people like to top with marshmallows and brown them under the broiler but I like them without the marshmallows.

It's a change up recipe instead of the candied yam stuff.

I usually make sweet potato casserole, but you could make a simple sauce of butter, dark brown sugar & a splash of maple syrup & bourbon for a similar taste.....Love it, especially this time of year!!
