Sap is the common word, but there are two different fluid transporting systems in trees: Xylem and phloem.

The xylem is the principle tissue and its liquid is called the xylem fluid (sap).

Breaking it down.... blood is comprised of plasma, platelets, sugar, and water with a myriad of trace materials..(you know HDL/ ldl etc) So blood would be the term for all of these elements combined.
Water is only one single item without the trace elements that make the tree thrive.
So a material with sugar, vitamins, chlorophyll, etc is you answer, whether it be Sap or Phloem. the fluid that gives trees the ability to live, respirate and reproduce.
